Description
In 1994, just as the fledgling craft beer industry was starting to gather steam in Colorado, Mike and Amanda Bristol settled comfortably in the lap of Pikes Peak and started hand-brewing fresh, distinctive ales for the locals in Colorado Springs.
Today, our beers are available on draught and in six packs, four packs, and bombers across the state. And Mike and Amanda have been joined by a cast of characters that make magic happen at Bristol every day. Collectively, we are a family of smart, friendly people who really love beer. We love the glorious flavor. We love the global tradition and history. We love the art and science of brewing. And the pure contentment of enjoying a pint at the end of the day.
In 2013, we moved lock, stock, and barrel into a former elementary school, where we happily ignore school rules by brewing and serving beer in the classrooms, including our onsite pub. Built in 1916, the building’s hardwood floors and brick walls, former gym and student artwork radiate charm and a hip but super-friendly vibe.

Bomber from Ratman!!! Nose is pumpkin pie, with all the cardamon, cinnamon, cloves, and ginger even lacking the pumpkin. Cherry brown with a small beige head. Flavor is very spicy with a light bitterness.

2003 brew date with a 2006 bottling date; this has gone past it's prime. Aroma has quite a bit of alcohol still, but behind that alcohol is notes of soy sauce, cardboard and sherry. There is also a teriyaki beef jerky note to the aroma. There is a hint of a fruity, dark berry note. Lots of alcohol. Pours a very still dark brown, not quite black with no head. Huge legs to this one. Flavor has quite a bit of alcohol, but also huge smoked, barbecue meat notes. Low to moderate bitterness. Some chocolate and coffee notes, but secondary to the alcohol and meat. Obviously no hop flavor. A bit of soy sauce, but the oxidation isn't as bad as in the flavor. Mouthfeel is medium full bodied; it's not as thick as one would expect a beer this large to be. Absolutely no carbonation. Lots of alcohol warmth. Overall this beer is well past it's prime, but has held up better than many other beers would have. ---Rated via Beer Buddy for iPhone

Bottle at Paul’s "Blind" imperial stout tasting. Pours cola brown. no head. Nose and taste of chocolate cake, vanilla, molasses and dark chocolate. A bit chewy and very sweet. Medium body.

Bomber from Doodler, brought out by Ratman in his luggage for me! Nose is heavy nutmeg, cinnamon, cloves, and pumpkin. Clear medium rust brown with a medium beige head. Flavor is light bitterness mixed with a very spicy pumpkin pie.

750ml bottle @Tampa Weekly thanks jcartmdg-pours gold/amber with white bubbles. Aroma is medium fruit, wood, vinegar, medium malt. Taste is sood, vinegar, tart medium fruit.

Bottle @ Rackhouse Colorado Rare Beer Tasting. Pours a hazy golden yellow appearance with a white head. Somewhat bubbly, spicy yeasty, light banana, a bit citrusy flavor. Kind of toasty malty, spicy yeasty, lemon, a bit earthy flavor.

Drank in Denver for GABF 2012. Pours a cloudy brown color with a small white head. A nice toasted malt nose with some chocolate. The flavor is a sweet and easy Vienna with toasted malts, some light dusty leaves, caramel. Good.

Drank in Denver for GABF 2012. Pours a cloudy dark amber color with a medium white head. The aroma is dusty dry malts, some caramel. A nice English style BW with dry caramel and sweet malts, dry palate. Dusty. Earthy. Very good.
