About
Yvan DE BAETS and Bernard LEBOUCQ meet each other in 2002, during the second edition of the Zinnekparade. Bernard had created the now famous ZINNEBIR for this unique Brussels event. However, it took another five years for BRASSERIE DE LA SENNE to settle effectively in the capital. In the meantime, the brewing activities were continued at friendly breweries. This bohemian existence came to an end on December 22, 2010, the date of the very first 100% Brussels brew!

Pour at Snallygaster 2025. Poured a bright orange color with a medium sized white head. Aroma was funky yeast, some bitterness. Big and fragrant hops, with yeast, and a big funky character.

0.33 l bottle from 'Etre Gourmet', bottled in June 2025. Slightly hazy, golden with a medium large, frothy, almost stable, white head. Slightly sweetish, gently fruity-floral and moderately grassy-spicy aroma of hay, some lemon peel and a touch of grains. Slightly sweet, moderately bitter, quite fruity-floral, gently grassy-spicy taste of grains, lemon peel, some fresh grass and a touch of white pepper, followed by a short, gently bitter, quite dry finish. Thin to medium body, gently effervescent mouthfeel, soft to average carbonation. Cracking Pils, fairly crisp and dry, pleasantly aromatic as well.

0.33 l bottle from 'Etre Gourmet', bottled in April 2025, 4.8% abv. Clear, very dark ruby to black with a large, frothy, slowly diminishing, beige head. Sweetish-malty, quite roasty aroma of coffee, some cocoa and hints of nuts. Slightly sweet, moderately bitter, quite roasty taste of coffee, cocoa, ash and roasted nuts, followed by a short, gently roasty-bitter, burnt finish. Thin to medium body, gently effervescent mouthfeel, soft carbonation. Decent.

Sweetish, gently fruity-floral, moderately grassy aroma of hay, lemon peel, dill and gooseberry. Slightly sweet, moderately bitter, gently dry, quite fruity-floral and moderately grassy taste of grains, hay, lemon peel, gooseberry, nettles and some dill, followed by a short, moderately bitter, gently dry finish. Thin to medium body, fairly effervescent mouthfeel, average carbonation. Refreshing, dry Saison, quite likeable.

0.33 l bottle from 'Etre Gourmet' as 'Saison van de Bruwer' at 5.3% abv, bottled in November 2021 (!). Hazy, golden with a medium large, slightly fluffy, slowly diminishing, white head. Sweetish, rather fruity-floral, fairly funky aroma of lemon peel, manure, gooseberry and hay. Slightly sweetish, moderately bitter, quite dry, gently fruity-floral and rather funky taste of lots of manure, lemon peel, gooseberry, hay and grains, followed by a short, moderately bitter, fairly dry finish. Thin to medium body, gently effervescent mouthfeel, average carbonation. Too much brett funk, unfortunately in an unpleasant way, yet an interesting brew.

All'olfatto si esprimono sentori di sour. L'intensità olfattiva è elevata, permanendo in maniera sufficiente. Il mantello birroso superiore resiste abbastanza. La grandezza delle bollicine è medio-fine. Il liquido è di consistenza limpida. Il colore è ambrato. Il corpo è pieno. L'amaro è nella media e c'è anche una componente moderatamente acidula. La forza gustativa è elevata e la durata è sufficiente. Le sensazioni boccali finali risultano di birra beverina. Il retrogusto è intenso. Il tetto della bocca porta note di miele, frutta secca, agrumi, erbe aromatiche, sour, chiodi di garofano, acetico, zenzero, rabarbaro e salsa di soia.

Bottle from The Beer Cave. Hazy amber body with an off-white head. Low carbonation. Aroma of raspberry and rhubarb. Flavour of grapefruit zest, rhubarb and salted lemon. Medium body with a slick texture. Light fizz. A sharp and rustic saison.

0,375l bottle at home. Bottled 03. April 2025. Amber lightly hazy color, small white head. smells spices, peppery, bit funky, herbal. Decent smell, bit weird. full body, soft carbonation. tastes peppery, earthy, citric, toffee, Brett, tobacco, bit herbal. finishes lightly dry and lightly sour with notes of brett, earthy and peppery notes. Drinkable one, not overly exciting though

0.33 l bottle from 'Etre Gourmet', bottled in May 2024 (!), so unfortunately already over a year old. Hazy, golden with a large, dense, stable, white head. Sweetish, gently yeasty-spicy and slightly fruity-floral aroma of grains, banana, clove, lemon peel and some fresh grass. Gently sweet, malty, moderately bitter, gently yeasty-spicy, quite grassy-spicy and rather fruity-floral taste of grains, banana, clove, lemon peel, pineapple and hints of honey, followed by a medium long, gently bitter, slightly dry and a bit boozy finish. Medium to full body, smooth and quite effervescent mouthfeel, lively carbonation. Very well-brewed Tripel, superbly balanced, great mouthfeel. Must be great when still fresh.
