Description
Botanist & Barrel crafts real southern ciders, sours, and dry fruit wines. We are the South's only natural cidery focused on spontaneous and wild cultures. We craft healthy adult lifestyle beverages for any occasion. We support our local farmers using only locally, sustainably and organically sourced fruits, including blueberries, apples and more from our organic estate farm. Only tree ripened apples are used in our ciders with a focus on traditional southern heritage cider apples.
All of our ciders and wines contain little to no residual sugar and are low calorie. As an experimental winery we have almost no rules with the exceptions being we never add additives like sulfites and we do not fine, filter or pasteurize any of our ciders or wines.

Bottle from Whole Paycheck. Duvel glass. Opaque, dusty gold, big head, lingering lace. Baby powder, aerosol, very mellow lavender, lemon oil, wax. Dessert & bitter apples, lemon, wax, slick honey. Mellow tartness, strong acidity, slight oxidation. No obvious vinegar in this one. Well carbonated, slippery, warming. Solid.

375ml bottle from Whole Paycheck. Mojito glass @home. Quick hitting head, cloudy, dull, straw gold body. Smell is sour. Apple cider vinegar, earth, lemon, wax, florals. Grainy pear sweetness, vinegar, earth, yeast cake, baking soda. Dry seltzer, hard water finish. Well carbonated, moderate tartness, very acidic. More B&B American Sidra than Oliver's. Meh.

375ml bottle from Whole Paycheck. Wine glass @home. Spritzy, quick-hitting head. Somewhat clear, yeasty gold. Sharp, twangy, maybe still fermenting papaya nose. Acidic, creamy, odd vacuum of flavor. It dissipates extremely fast & I'm just left with a numbing grapefruit pith. Lacks any real finish. Slower sips gets me some white grape sweetness, chalk & minimal acetone, but the leftover pith is dominate. It's a really strange experience. Boozy, yeasty, acidic, low tartness. Good.

Bottle from Whole Paycheck. Lo-ball @home. Spritzy, tropical, blushy red. Needs an umbrella. Fruit punch nose: orange/cherry/apple/lime. Taste is bittertart & mildly funky apples, with lots of bold tropical flavors. Appropriately tart, faintly sour. Mostly cherry, grape, apple. Boozy Hawaiian punch. Apple isn't lost. Lingering yeastiness. Okay carbonation, mostly thin, parching, strong. Fun flavors.

Clear 750ml bottle from Whole paycheck. Low-ball @home. Pale, rose gold, slightly hazed. Mild, wild ferment, Sidra-ish. Sharp mulch, vinegar, sour grapes. Crispy, faded spices, sour mix, nicely bitter & lingering apples, grape skins, gum. Vinegar is more on the nose then taste. Lots of their ciders have been super acetic lately, in a bad way. Very carbonated, tart, bright, thin, somewhat yeasty, drinks easy, not boozy. Not bad. Drink fresh.

375ml bottle from Whole Paycheck. Actually $2 cheaper than my local. Stupid. Low-ball glass @home. Glugs out like it's a bit viscous. Small head, weak, quickly dissipating. Still, uniformly cloudy, fruit punch, of the Minute Maid variety. Smell is a base of funked, browned, sour apples along with a second weaker note of cherry twang that deepens the longer it sits. Lots of sweet cherry meat & pith infused into a horsey, wild cider. Sour cherry balances nicely & helps subdue the vinegary apple stew. Lingering cherry skin prickliness is nice. Dry, very weak carbonation, goopy/syrupy feel, lots of sludge left in the bottle. Noticing how acidic this was after the fact. Really needs more bubbles. Looks like this was better on tap maybe. Surprisingly okay.

Clear 375ml bottle from Tasty Beverage in Asheville. Two years in storage, 4 months in the fridge. Highball @home. Clear, but jellied. Pale straw gold, intentionally still. Smells of tart apples, wet stone & clean, wet hay. Taste is slightly tart like unripe peach. Highly acidic apples, faintly gummy, with a mild, but slick wildflower sweetness that lingers. Flat, watery but not completely thin, hidden abv, inoffensive & easy. Okay to good.

Clear 375ml bottle from the now defunct Tasty Beverage. Boxed in the basement for almost 2+yrs, fridge sleep for the last 4 months. Low-ball glass @home. Only aged for 1 month in salty bourbon barrels, so don't get any ideas. Peachy, filtered, still body. Very light sediment. Muted, dusty, faded acidic apples, sour berries, leafy. General fade. Almost nothing there. A little warmth brings out a touch of the barrel. Good salty sour combo. Acrid apples, raspberry flavor that is weak or just past it's prime(but it is sour). Slippery & savory salt, toffee, very light booze. Intentionally still. Very thin, very acidic, boozy enough. Not something that I want two of, but it was fun. Very creative for the time. Also way cleaner than the natural fermentation they go for now.

Single from Blue Door in Hendo. This is a yearly brew but until now, I could never seem to get a reservation at Cúrate or a single out of a pack. Stemless wine glass @home. Cloudy pale straw gold pour. Serious chunks on second half of the bottle. Smell is sharp with white grapes, melon, lavender, bubblegum, yeasties. Vinegary melange of apples, sour cherries, apricot, green peach. It's all of the fruit without the funk of Sidra. Acid is huge, very sour, leaving little room for barnyard. Finish is yeasty, drying & still lingering with vinegar. A true sour cider. Less vinegar would win me over. Crispy, wincing sourness, yeasty, okay ABV that's probably slightly higher than listed. Surprisingly drinkable as long as the food keeps coming. At least some cheese. Don't drink on an empty stomach.

Clear & corked 375ml bottle from Appalachian last year. Long sleep in the basement fridge. Not completely filtered, but compacted, settled & clear yellow. Bittersweet apples, honey & very mild, warming booze. Could be rum for all I know. Some sediment by the second pour has little effect. Taste is bittersweet apples, mild tartness, white wine tannins, low perceived acid, mellow botanicals, lemon. Intentionally light, thin, juicy, runny, flat out watery, diluted flavor. Cool, calm, refreshing, lighter than label ABV. Not sure. Not worth the premium, but otherwise okay.
