Ancient Beer, Modern Method.

Fermenting since 2014 with only wild brattleboro mixed culture yeast. continually pushing boundaries of new sour beer. brewhouse fueled by wood, not fossils.

To truly understand terroir and wild yeast, a brewer must come to terms with the type of beer that “wants to be made” in their region. We are proud of Brattleboro’s wild yeast for its balance, its stone fruit and pecan character, and how dry and effervescent it leaves the beer. We are grateful to our region’s farms for the availability of world class hops and fruits, as well as to our area distilleries for unique and beautiful oak barrel flavor histories.

We delight in making beer that could only be made in our place, with our team, supported by our community and environment.

Can from Fort Point Market shelf, undated, drunk 6/18/22. Dark copper-golden, good clarity, with a small, white head showing light retention. Soft tannin, golden raisin and juicy citrus with light stone fruit, vanilla and mild oxidation. Moderate acidity with a touch of acetic character. Honey and biscuit from the ample malts helps balance. Juicy apricot, tart lactic and sour acetic notes with big, honey-like malts helping to add a solid texture and good balance. Juicy citrus, apricot, peach and light vanilla and tannin lingering alongside apricot and light acetic acid. Juicy, malty, intensely flavorful and pretty well-balanced, though there is a bit more acetic acid than I'd prefer.

Undated can from Fort Point Market shelf, drunk 6/18/22. Clear ruddy-mahogany with deep cherry hues and a dark beige head that slowly fades to cover/ring. Strong, complex nose showing black pepper, molasses, prune, raisin, maybe even some smokey scotch. Light alcohol, not hot, with a solid base of dry caramel and plentiful, tart red fruits. Souring bacteria lingering, but not dominating. Vanilla, chalk/mineral-laden wine and more molasses as it continues to breath. Cherry, molasses, raisin, caramel, black pepper, strong mineral and strong lactic acidity with a bit of acetic acidity lingering. Vanilla and caramel lingering alongside moderate-to-strong sourness. Fantastically complex barrel notes without being overdone/dominant. Scotch and red wine in the background with lip-smacking caramel and raisin sweetness mostly balancing the strong acidity. Still a heavy brace of cringing acidity at first. Pretty incredible stuff, especially for its size. Doesn't drink like that at all - more in the range of 8-9%. Though there is some inevitable alcohol, it's not hot/sharp. Malts are excellent and barrel tannin helps contribute texture, as well.

Sampler at brewery. Copper colored pour, small bubbly head. With the hops and kettle souring, plus the barrel aging, there is a lot going on here. Sweet, sour, woody, floral. My gut wouldn't let me finish.

Taster pour at brewery. Hazy yellow, thin white head. Lemony, floral, savory aroma. Taste follows with lemon peel, coriander, sour, sweet. Zippy, lingering, pucker.

Pours a hazy amber with a thick white head. Some carbonation. Taste has lactic notes. Taste has sour fruity notes, stone fruits, figs. Palate has much of the same. Good.

Pours amber with a fluffy creme head. Aroma of guava, passion fruit, lactose. Taste of lactic guava. Palate has lactic malt, not much else. Good.

Pours hazy blood orange into a tulip. White head with medium retention recedes to hug rim. Tart apricot and mango aromas. Tart with aspirin, tangerine and mango front to back. Lasting meringue finish.

Almost exploded can, popped on one side, but rescued before any real opening, and when popped the top, there was no fight from the carbonation and no loss at all, nor any real thick head - crazy, but that's spontaneous fermentation for you. Aroma of tropically, fruit, funky and perfumey fruits with a lot of sour, but way more tart notes than anything else with a lot of the spontaneous fermentation, dry wheat and yeast here that makes this very nice in the nose with some passionfruit of course, kiwi and light guava notes, all tart and soured - very nice. Light-bodied; Strong floral and especially fruity notes dominate here with a lot of passionfruit and guava flavours and a tart funkiness and some hay dryness with spontaneously fermented yeast as well and a little dose of caster sugar at the end, but all ends well. Aftertaste is dry, very mild, fruity, super tart and soured with a complex yeast bite and a lot of enjoyable floral and perfumey finishes from the fruit and yeasts here make this very nice throughout. Overall, a relatively easy-drinking, but super flavourful, complex, effervescent and tart beer with some passionfruit and guava notes, but the yeast and dryness make this out to be very nice, and that comes from someone who likes passionfruit the best out of all fruits. I sampled this sixteen ounce, pint-sized can, purchased from the Department of Beer and Wine in Alexandria, Virginia on 10-July-2020 for US$5,21 sampled at my house here in Washington on 21-November-2021, about a year and half after purchase - if you have one this old (or older), check your can pressure!

Can from the source. Brilliant dark gold in color with a thin white head that quickly dissipates. Lemony tart nose with hints of funk and stone fruits. Taste is more lemony tart acid with bits of cherry. Its quite tasty but most of the kriek's I've had are bright to dark red and have ton's of cherry aroma and flavor. This one not so much.
