Ancient Beer, Modern Method.

Fermenting since 2014 with only wild brattleboro mixed culture yeast. continually pushing boundaries of new sour beer. brewhouse fueled by wood, not fossils.

To truly understand terroir and wild yeast, a brewer must come to terms with the type of beer that “wants to be made” in their region. We are proud of Brattleboro’s wild yeast for its balance, its stone fruit and pecan character, and how dry and effervescent it leaves the beer. We are grateful to our region’s farms for the availability of world class hops and fruits, as well as to our area distilleries for unique and beautiful oak barrel flavor histories.

We delight in making beer that could only be made in our place, with our team, supported by our community and environment.

From a pint can. Pours a slightly hazy tea with a small off white head. Aromas of apple and raspberries. Flavors are tart raspberry.

Can shared at the Homebrew meeting, thanks whoever brought it! Pours a lightly hazy golden color with a hint of red and decent sized bubbly white pink head that dissipates. Faint bready maltiness bits of lactic tartness and moderate acetic. Not bad.

Opaque golden color with musty, pine, and citrus aroma. Flavor is mildly sour with a sweet backbone. Some fruity hop flavors with a funky finish.

Opaque pale pink color with a funky fruit aroma. Taste is mildly sour, slight berry sweet and tart, a little flat tasting.

Deep ruby red color with a strong acidic aroma. Taste is intensely sour. A little sweet at the end before a dry finish.

2022 version. Pours clear yellow gold into tulip. Bright white head with medium retention recedes leaving scant sheets. Apple and oak aromas. Dry with tart apple and mild hay upfront turning to earthy oak in the medium length finish.

Undated can drunk 10/1/22. Clear, dark amber-with a ruddy tint and a small, pinkish/yellow-tinged, beige head that runs to edge. Souring bacteria and red and white wine galore with light caramel, molasses and vanilla. Juicy red wine, caramel-vanilla and plentiful souring bacteria adding moderate acetic and moderate lactic acidity. The acetic is pretty strong but the massive malt does help soak up a lot of it. Nice grape character, mineral....so god damned juicy. Sticky brown sugar and vanilla. As with most of these big ass Hermit Thrush's, somehow free of alcohol character.

16oz can pours out golden peach color topped with a white head. Nose is nice jammy apricot peach and some tartness. Taste is more of the nice stone fruit mix and a good tart end.

Draft at the source. Clearish deep amber color, small white head. Fruity aroma, stonefruit and flowers. Taste is softly sour with more mixed stonefruit, light tannins, bitter fin ish. Tasty.
