Ancient Beer, Modern Method.

Fermenting since 2014 with only wild brattleboro mixed culture yeast. continually pushing boundaries of new sour beer. brewhouse fueled by wood, not fossils.

To truly understand terroir and wild yeast, a brewer must come to terms with the type of beer that “wants to be made” in their region. We are proud of Brattleboro’s wild yeast for its balance, its stone fruit and pecan character, and how dry and effervescent it leaves the beer. We are grateful to our region’s farms for the availability of world class hops and fruits, as well as to our area distilleries for unique and beautiful oak barrel flavor histories.

We delight in making beer that could only be made in our place, with our team, supported by our community and environment.

16 oz. can dated 06-04-21. Aroma shows sour lemon and toasted grain. Flavor has a huge tart lemon acidic character. Thinner body with mild funky grain and vinegar notes. Old school sour ale. Not really my thing.

16 oz. can dated (Smudged) 06-17-21. Aroma shows a bold character of Lactobacillus and moderate berry. The blueberry and the flavor is natural and organic. Honestly, quite bolder blueberry than I was expecting. Lactobacillus gives oak tannins with a earthy character. Nicely restrained. Not overly sour.

Can. Hazy amber, small off-white head. Rye, tart fruit, oak, funk. Subtle bourbon notes, which is a big plus in my book (as opposed to overpowering bourbon). Good stuff.

Can pour from trade with Johnnnnniee--thanks, John! It's a hazy medium brown (cream soda) with decent sparkle, finger-width frothy off-white head with poor retention and no lacing. Aroma is strong tart fruit with milder sweet citrusy offset. Taste is strong sour fruit and yeast from the second it touches my lips with a touch of barnyard and milder hoppy (hint of pineapple?), woody balance. Mouthfeel is light side of light-to-medium bodied with thin, frothy texture, soft carbonation and finish as taste. Overall, good strength to the aroma and taste and gets props for being well crafted with decent complexity and interest, but it's just not my style. Glad to try the brewery!

Can from the source. Nothing on the can indicated which version of this beer I'm rating. Brilliant deep gold in color with a frothy white head that persists. Vinous lemon tart nose with hints of oak. Lemony acid flavor with some faint jammy bits.

Can from the brewery labeled as Green SIPA Brilliant dark gold in color with a good sized frothy white head that slowly recedes. Earthy lemony tartness front and center. Citrus and earthy hops with hints of cherry and earthy woodiness to counter. Complex, really nice.

Can from the source. Pours a dark red/brown color with a frothy off white head. Tart cherry and lemon aroma with bits of balsamic and red wine. The flavor is tart up front with the fruit coming through mid way then leaving a tart almost chalky feel. Really tasty
