Description
Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.

Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Courtesy of Dak, thank you sir. It pours a copper color with tan head. The aroma is sort of peach flavored cotton candy mixing with floral hop notes, apples, pears and a malt sweetened wheat like sensation with a bit of booze at the end of the draw. The taste has a mix of light skinned sweet fruity esters like pears and apples mingling with spicy hops and then moving into stronger and stronger floral hop notes. Interesting brew where smooth sweet wheat takes this into the finish.

Capped 750 from Wine & Cheese in Clayton, MO. Pours dark brown with a slight tan head. Aromas of burnt malt, not too burnt, chocolate and berry jam. Med+ body. Flavor is dark berry, chocolate, sourish, dark malt. Took a moment to slide into this, but (except for a peanut butter note that just popped up) this is quite a production. Ends rather sour currant with chocolate and earthy notes.

750ml bottle from beernbourbon. Thanks Vince!! Poured into a snifter. Pours a lightly cloudy orange-yellow with about 2 fingers of thick white head. Aroma of honey, citrus and yeast. Taste is light sweet. Honey, yeast and citrus. Also some nice clove and a little warming boozieness, even at only 5%. Light bodied with a thin texture. Lively carbonation and a decently long finish. Overall, very good. I may just have to make the trip over the river to grab some more of these brews.

750ml bottle from beernbourbon in a trade. Thanks Vince! Poured into a snifter. Pours black with about a finger of dark brown head. Aroma of coffee, dark chocolate and vanilla. Taste is...different. Lots of pepper with minimal heat. Lots of cinnamon, a bit more than I like. Huge taste of dark chocolate and coffee. Full bodied with a relatively thin texture, which I like. Soft carbonation and a very long, very bitter finish. Overall, this beer is awesome. I’m wishing I had a friend here to split it with because I think 750ml is a bit much for just me. If you get it, make sure to split it.

On tap at brewery. Pours a hazy deep rose colour with no head. Sweet cereal detracts from the aroma. Lots of red fruit on the flavor and orange bitters. Dry finish is pleasing.

Lots of nice yeast esters on this beer makes me think this is spot on for style when balance with the slight spice! Flavor is spicy as well. Mouthfeel is effervescent with champagne like qualities. Very nice crispness.

On tap at brewery. Pours a clear pale yellow. Nice sweet grain aroma. Lots of lemon on the aroma. Medium mouthfeel follows through with a crisp, lemony finish.

On tap at brewery. This is a great beer -- pours a dark black. Aroma of chili and cocoa jump out of glass. The cinnamon is also there. Very unique. Flavor follows through with complex roast and chocolate with the spice from the peppers throughout. Fantastic.

Capped 750 from Wine & Cheese in Clayton, MO. Pours very, very dark amber/brown with a creamy/bubbly beige head. The primary aroma is pumpkin pie spice. Squash seems to be buried in all that. Med body. The cinnamon is very strong. Don’t know if the squash roasting did much for flavor, but maybe. Might be the best seasonal so far.

Capped 750 from Wine & Cheese in Clayton, MO. Pours hazy copper with a creamy/bubbly beige head. Aroma is dark fruit with a hint of phenol. Med body. Phenolics are a bit stronger in the flavor, and the dark fruit is good with that. Heat detectable but not bothersome. Finishes just on the dry side. I keep thinking brown sugar is present, but it could be the dark fruit. Pretty tasty ale.
