Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Bottle from a trade with Pawola22. Pours hazy golden color with white head. Flowery and doughy aroma with some pale malt. Grassy and doughy flavor with some light malts and a little funk. Medium body with lively carbonation. Thanks Brian.

Bottle shared by savnac: Poured a thick dark brown/black with a tan colored head. Aroma is very cacao/chocolate and a weird offsetting peppery. A very weird mix of chili spice beginning leading to a strong cacao and roasted malt flavor. It seems to me that the spice comes back in the end as well. I couldn’t see myself drinking a large quantity of this, but in a group setting it was perfect.

Bottle. Pours apricot gold with white head. Nose and taste of Pluot, plum, apricot, banana, wheat malt, yeast and lemongrass. Medium body. Lots if fruit. Finishes grassy lemon.

Bottle. Pours black with tan brown head. Nose and taste of coconut milk, roast chocolate malt, vanilla beans, roast coffee and toasted almonds. Medium body. Light lactose and dry coconut finish.

New Beer Distributors, NY 750ml ($10.25): Pours an orange colour with a light white head. Aroma is saison funk, loads of flowers, and a hint of honey. Taste is very lightly bitter and hoppy. Mouthfeel is nice and ligthly carbonated. This is dry, but just a bit. Sweetness is also really light and subdued. A pretty decent saison.

Bottle at the Funky 8, Brooklyn, NYC. One of the best beers of the day. Pours gold with a large, fluffy white head. Aroma holds subtle barnyard character, with light wheat and floral tones. Great flavor, very well balanced, mildly bitter with grass and flowers, sweet with fine, doughy malts. Light to medium bodied with smooth, massaging carbonation. More of the same to finish - flowery hops, doughy malts, very subtle funk. A beautiful beer. Mellow, smooth. Superb.

750mL bottle pours slightly hazy deep gold with loose light tan head. The aroma offers up citrus like tangelo notes that quickly get resiny with wood sap spiciness. The taste is similar with a nice citrusy orange to tangelo sensation and then leading into more and more bitterness with resiny wood spicy notes. The malts that sweeten up the citrus and the spicy wood are in good balance and make for a pleasingly bitter experience.

Bottle. Pours orange amber with white head. Nose/taste of apricot, malt, Belgian yeast, earthy hops and moderate spicy hops. Medium body. Dry spicy finish.

Bottle at Paul’s. Pours dark brown. Nose/taste of sour milk, black currants, dark cocoa and caramel. Mild acid. The sour milk really throws me off. Otherwise solid. Medium body.
