Sample at the Princeton location: Pours a clear reddish-orange color with a compact light beige head that burns off quickly. Spotty lacing. Aroma of pumpkin, malt and nutmeg. Light-bodied with mild pumpkin and cinnamon flavors, along with other spices in the background. The finish remains pumpkin-y with a short herbal aftertaste. Overall the beer is okay, albeit one-dimensional.

Sample at the Princeton location: This beer is a slightly hazy golden color with a medium thin bone white head that dissipates steadily. Stringy lacing on the glass. Herbal hops and grainy malt aroma. Light, crisp body with subtle spiced hops, clean malt and citrus flavors. The finish is earthy and clean with a light spiced hops aftertaste that lingers a bit. Above average all around.

Sample at the Princeton location: This beer pours a clear orangish-amber color with a medium thin light beige head that has fair retention. Thin rings of lacing. The aroma is mostly malty with some bread and floral hops. Medium, smooth body with a nice sweet malty character. The sweetness is imbued with an earthiness and woodiness that prevents it from becoming one-dimensional. Caramel and hops are present as well. The finish is clean and toasty with a lingering malt. Rather than going the safe Killian’s route as many brewpubs do, this beer is both flavorful and drinkable.

Sample at the Princeton location: Pours a pale yellow-gold color with a thin white head that fizzes away quickly. Spotty lacing. Mild honey and malt in the nose. Light clean body with malt, honey and wheat flavors. The finish is wehaty and malty with a lingering honey aftertaste. Average overall.

It has a nice peachy colour to it w/ loose lookin’ head that leaves some lacing. Smells all malty and what not. The taste is very, very wheaty (as could be imagined). Obviously low on hops and high on the maltiness. The finish has a more sour bite to it at the end. Not too much in the way on honey taste as far as I am concerned. The beer, as expected, is also somewhat watery, but that is ok.

A white head descends atop a hazy brass-golden body, and is initially large and somewhat stable, but fades rather quickly to partial cover, while providing some adequate lacing. Very low clarity.
Hints of dry esters and light acids quickly succumb to spicing. All too quickly for a saison, as the yeast is not able to be fully grasped in the aroma. Fresh and peppery, with hints of vanilla notes from the yeast and a touch of lemon, but there seems to be a large amount of dullness working against the otherwise well-attenuated, fairly dry nose. Could be a heavy yeast presence, could be wheat or other adjuncts, but whatever it is, it dulls the snappiness and I can find little excitement in what the coriander provides in overabundance. Hops are herbal, with trace amounts of bitterness and there do some to be some lightly tart fruity notes, but it just dosent have that noble, wise, distinctive yeast character so often lacking in American interpretations. Tends towards fruity and spicy and less crisp, dry and tart. Even the malt is somewhat subdued/jumbled, without the usual soft honey suggestions.
The flavor, while certainly not exhibiting any flaws, again leans heavily on the coriander and what may be other spices (not sure). Certainly it is chewy, lightly astringent at times and rather acidic in combination with the peppery coriander, on the finish. Hop crispness could provide relief, but instead, there is a lightly tart, fruity note on the end, that is entangled with almost bready malt sweetness. Seems more like a wit mixed with a Belgian golden ale. Don’t get much of a classic saison here. I agree with Paul, the yeast strain used is questionable. Still, for an American "spiced ale" or "American saison", it serves its purpose, further supported by the fact that the brewer’s intentions seem to make nothing more than a refreshing wit-hybrid. Still could use more dryness through and through. Slightly creamy after warming is the mouthfeel, whereas the carbonation takes a little while to calm down to appropriate levels. No alcohol apparent in aroma or flavor.
Again, nothing against the beer or the brewer, but I judge all saisons against the classic Belgian producers to which this gives little competition.

on tap-pours a retaining creamy brown head that laces with black color. Aroma is coffee, sweet. Taste is coffee, sweet, slight bitter finish. Medium body, minimal carbonation. Not my taste.

on tap-pours an offwhite head that laces with cloudy orange/brown color. Aroma is banana cream, vanilla, malt. Taste is smoked, banana cream, vanilla, clove, wheat, creamy. Medium-full body. Nice occasional beer.

on tap-pours a creamy offwhite head that laces with slightly hazy gold color. Aroma is musty malt, a bit of biting hops. Taste follows. Balanced but very mild/plain. Carbonation, standard for cask-hand pump, mild.
