Founded in 1988, Brasserie Fantôme has gained international attention and a cult following among lovers of craft beers. Owned and run by Dany Prignon, Fantôme is known for its unique variations on the Saison style of farmhouse ale, often involving the use of herbs, spices or fruit juice. Within the craft beer community, Fantome saisons are considered highly desirable and have developed a significant audience in the United States and United Kingdom. Ironically, while their complex, earthy, and herbal flavors have caused them to be sought out by connoisseurs outside of Belgium, Fantôme's products are difficult to find and not well known in the country of their origin.

Quick gusher. Quite fun stuff. The pepper dried things out, mainly in the finish and throat. Mellow yeast expression. A little bread crust. There is some peppery heat but it’s manageable. Fun novelty. Decent balance, all things considered.

Murky orange amber topped with a lasting off white head.
Nose is tang fruit esters, herb, yeast trace, hedgerow.
Taste comprises mellow berry tang, herb, farmyard nip, grains, light chilli heat.
Medium bodied, fine carbonation, semi drying close.

Bottle. Color: Lightly hazy golden, white head. Aroma: Spicy, floral, hints of citrus fruit. Taste: Spicy, floral notes, elderflower, earthy, some orange and hints of lemon, dry-ish long lasting finish with a nice amount of bitterness. Medium body, below average carbonation. Nice complexity.

Slightly lemony sweetness. Earthy richness like a handful of fresh sweet flower petals with dew. Soft, vaguely funky bitterness. Low carbonation. A "summer beer" released in autumn, drunk in winter 😂

Bottle. RAD Beer. Hazed yellow. Solid swede. Wow this is spicy. Loads of peppery notes to the tune I’m wondering if there’s a bit of chilli in it. Fully aromatic with a coriander like thing. Lemon pith. Wheat. Fantome yeast aplenty. Taste has a soft sweetness with a spicy punch. Nice pithy bitterness too. Good body and nicely foamy. Spicy peppery finish. Love a bit of Fantome.

YES! That is THE Fantome nose you want. Classic phenolic spice meets cellar mustiness and heavy mineral-like papier machee. Excellent malt, excellent yeast and no alcohol or weird spice that is unwanted.
Phenol is strong in flavor. Perhaps a bit too strong. But the malt is wonderful here, especially for a mere 4.5%. Rich and doughy with light honey, lots of baguette-like character and big mix of white and black pepper on the end. Tight, engaging carbonation helps with perceived dryness and more interesting, or maybe not quite so interesting? spice lingers (too much phenolic white pepper, ultimately).

On tap in the company of Mum and Keith, Monday 20th October 2025. Pours warm gold edging towards light/mid amber, large white head, lovely bitterness, spicy with a nice peppery touch, yeastiness following, this is very nice, super more'ish', in fact despite the fact that there's a bounty of beers that are likely new to me I had two of these.
