Description
Holy Mountain is a brewery and taproom located in the Interbay neighborhood of Seattle, founded by co-owners Colin Lenfesty and Mike Murphy in 2014. The influence of oak has always been the focus of the majority of beers brewed at Holy Mountain. A sizable building near the Seattle waterfront has allowed the team to build a vast stock of oak barrels, puncheons, and foudres used for both primary fermentation as well as long-term aging.
The proximity of the brewery to the Yakima Valley also allows the team of brewers to utilize hops from the best producers in the world, constantly exploring the relationship between hops, oak, and mixed fermentation. Holy Mountain doesn't offer any year-round beers, which creates an ever-changing lineup in the brewery taproom. In addition to oak-influenced beers, Holy Mountain also offers a wide range of rotating, hop-forward ales and lagers.

Draft pour at the brewery. Pours a cloudy pale yellow with a fizz ring head. Tart aroma with big grain. Flavor us sour ctrus fruit, smooth grain, and a hint of grape. Nice tart, easy drinking beer. Lovely stuff.

Half pour at brewery. No clarity golden yellow. Aroma is bright lemon funky brett. Spike and herbal as well. Lively for sure. Flavor is similar with lots of tartness and sharpness on the cheeks. Really light, cleanses the pallet. Exactly what it’s designed to be. Maybe a bit too sharp on the cheeks, would hurt if I just ate spicy food.

Draft pour at the brewery. Glowing cloudy yellow pour with a fading head. Tart lemon aroma. Flat or is lemon heavy, soft grain, sour grape, apple and citrus. Grainy sour citrus finish. I’ve hesitated on these guys so far, but if this is what I’m missing, I have some catching up to do.

Draft pour at Brouwers. Darker golden pour with a thin fizz head. Malty aroma with a hint of apple. A little on the boozy side up front, spice heavy, moderate fruit. Finishes on a lingering fruit. A bit harsh, but good.

Bottle shared by luttonm @Bir&Fud (Rome). Pours golden, a bit unclear, with a decent white head. Aroma is yeasty, hay, brett, yellow fruits, apricot, lemon, nice. Flavour is rich and complex, medium to light sweet with a good bitter end, light astringency. Medium body, medium carbonation. A great saison!

Bottle from my lovely wife. The version I am rating says 6.5% vice the 5.1% listed on this RB page. Clear golden with a fizzy white head. Sweet lemon, musty, a bit of hay, bitter hops, light oak. Finishes dry and bitter. Nice complexity and great taste. Highly enjoyable.

Draft - Very light grains on the nose. Cleanish copper with a small white head. Tons of oak, cooked orange and grains with a bitter woody finish.

On tap at Holy Mountain, pours a hazy dark orange with a small white head. Aroma brings out a fair amount of oak upfront, followed by whiskey and a touch of bready malt. Flavour is more restrained and well-balanced, with subtle notes of oak and even subtler whiskey coming through. Bone dry palate, with almost no malty sweetness. Certainly more interesting than most California commons, but still not terribly exciting. Decent.

On nitro tap at Holy Mountain, pours black with a medium creamy tan head. Aroma brings out toasted hazelnuts upfront, followed by some cocoa and a little roast. Flavour is along the same lines, with toasted hazelnuts and cocoa in decent harmony. A touch of astringency on the finish, likely from the nuts. Creamy body and reasonably well-balanced, but I'm not a big fan of this.

Draft - Dark roast and nutty notes. Jet black with a creamy light brown head. Cocoa, dark roast and nutty astringency. Not my thing.
