Description
Holy Mountain is a brewery and taproom located in the Interbay neighborhood of Seattle, founded by co-owners Colin Lenfesty and Mike Murphy in 2014. The influence of oak has always been the focus of the majority of beers brewed at Holy Mountain. A sizable building near the Seattle waterfront has allowed the team to build a vast stock of oak barrels, puncheons, and foudres used for both primary fermentation as well as long-term aging.

The proximity of the brewery to the Yakima Valley also allows the team of brewers to utilize hops from the best producers in the world, constantly exploring the relationship between hops, oak, and mixed fermentation. Holy Mountain doesn't offer any year-round beers, which creates an ever-changing lineup in the brewery taproom. In addition to oak-influenced beers, Holy Mountain also offers a wide range of rotating, hop-forward ales and lagers.

On tap at Holy Mountain - Interbay, pours a clear pale golden with a medium white head. Nose has plenty of grains, straw, and biscuity malt. Flavour is clean, with straw, toasted grains, and dry rice. Finishes dry and clean. Nothing too interesting but well-brewed for what it is.

On tap at Holy Mountain - Interbay, pours a cloudy orange amber with a small white head. Aroma has plenty of brett upfront, some subtle stone fruit in back. Flavour is much the same, bringing out big funky brett, a touch of stone fruits, and a bitter, citrusy finish. Nice brett character for sure, which eats everything in its path. Very good.

On tap at Ridgewood, pours a clear pale golden with a small white head. Aroma reveals wild yeast, gentle guava, and some nice minerality. Flavour blends pungent guava really well with the wild yeast, with intense bitterness, light acidity, and some oakiness. Big tropical fruits, bugginess, and bitterness on the finish. Excellent.

On tap at Ridgewood, pours a hazy bright yellow with a small white head. Nose has notes of straw, subtle floral dry-hopping, and minerality. Flavour is quite bitter, with bitter floral dry-hopping, straw, and crisp biscuity malt. Extremely bitter for a kolsch, but just not very interesting flavour-wise. Okay.

On tap at Holy Mountain - Phinney, pours a clear orange with a small white head. Aroma has a very complex wild bugginess, plenty of oak, some stone fruit, and light acidity. Flavour is much the same, with plenty of wild yeast, oak, apricot, and moderate acidity. Not the most cohesive or elegant construction compared to HM’s standard for wild saisons, but this is very nice.

On tap at Holy Mountain - Phinney, pours a clear pale golden blonde with a medium white head. Aroma has plenty of tropical fruity hops from the Mosaic, light allium (Krush?), some citrus, big pine. Flavour is assertive, with big piney hops, massive tropical fruity bitterness, some citrus, light hop tang, and just enough biscuity malt to back. Slightly oily palate, finishing bitter and fairly crisp. Excellent.

On tap at Holy Mountain - Phinney, pours black with a small beige head. Aroma is assertive, with intense roasted malt, woody piney hops, a touch of cocoa, bread crusts, and light resins. Flavour is powerful and balanced, with big piney hops, moderate roast, some dry bitter cocoa, crusty bready malt, and finishing pronouncedly bitter. Expertly constructed. Fantastic.

On tap at Holy Mountain - Phinney, pours a clear bright golden with a medium white head. Aroma brings out bright tropical melon, some tangy citrusy hops, and resinous hop oils. Flavour is bright and wonderfully expressive, bringing out a wonderfully tanginess from the Nelson, tropical character from the Mosaic, resinous hop oils, some pine, and just enough biscuity malt to back. Beautiful hop treatment here, expertly constructed as usual. Excellent.

Aromas are citrus, straw, malt. Flavors are similar to nose and slightly more sweet than bitter with okay carbonation. Medium to full body. A touch medicinal in the finish. Not bad not great.

Poured from 650mL bottle. Near black with small beige head. Dry light roast, tobacco, feint dried fruits (verging sour) and soy sauce, light oxidation. Decent, but a bit too aged.
