Nous concocter la meilleure bière! Founded in 1997 by Jérôme Rebetez, who had formerly been trained as an oenologist, this tiny brewery has rapidly become known for making beers that stretch traditional beer style guidelines and use unorthodox ingredients. BFM's products are made in small batches and hand-packaged at the brewery.

A good and powerful IPA, the oat is giving a dry and mineral side, citrusy, fruity, a bit sweet and sirupy, the bitterness is staying a long time at the mouth, yeasty, yellow and grey body, troubled, a good brewery for sure, 21.07.20, in my hotel room, Paris, purchased in Alle at the denner.

Bottle shared round Dan and Megan’s. States 2018 on the neck label but this beer definitely doesn’t need more batches adding. Anyway. Hazed copper amber with minimal white head. Past it’s best by some way. Some Flanders style notes left and lots of barrel but I’m guessing this is a shadow of its former self. Nice tick though.

Huge, dense, banana-yellow head, very regular, over foxy red-brown ale. Red stonefruit, lactic acid, old barrels, biscuit, fusels. Vinous, demi-sec red wine, red fruit, lactic acid, lightly sour fruit, red grapes, raisins. Light acidthinning, soft carbonation, quite slick. Very gooe and original: a Barley wine with a sourish edge, excellent. However... pizza???

Caramelly and rich with more sherry than chianti. Round red fruit, controlled oxidation and lots of vanilla. No booze, low acid.
Good acidity with fruity, jammy raspberry and strawberry. Creme brulee-like caramel, vanilla and oxidation. Soft, chewy, sherry like with red fruit and round acetic. Nice and soft and chewy with long malt. Really interesting and has aged wonderfully.

Bottle. Murky brown color with no head. Aroma is red fruits, vinegar, quite intense. Taste is the same. Murky mouthfeel, low carbonation. A bit disappointing.

On tap at Ammutsøn, pours an opaque muddy dark brown, basically no head. Nose is complex, with lots of tart cherry skins, red wine, tannins, oak, and some leathery notes. Flavour is pretty exquisite, with tons of red wine barrels, oak, leather, tons of tannins, plenty of balsamic but without being acetonic, finishing with dry, tannic, oaky red wine. This is one of my favourite of this series in a while. Lovely.

On tap at Ammutsøn, pours a clear pale yellow with a tiny white head. Aroma is pretty standard, with green apple juice, apple skins, and light sugars. Flavour is essentially bone dry, with some tannins, hay, and musty apple skins. Dry, musty and crisp. Good.

33cl bottle from Das Alpenhaus. Dark brown pour, ring of fine beige foam. Aroma is sour, malty, mildly sweet. Taste is chocolate, Tootsie Roll, sour, sweet, a little bit mouth coating. No detectable warmth.

Tap at Ammutsøn. Hazy strawberry cherry. Funky, barn, tart, red fruits. Intense, heavy, long, warm and strong. Aah yes and tart, fruity, of course. This is interesting (in a good way), a slow sipper.
