Description
Nous concocter la meilleure bière! Founded in 1997 by Jérôme Rebetez, who had formerly been trained as an oenologist, this tiny brewery has rapidly become known for making beers that stretch traditional beer style guidelines and use unorthodox ingredients. BFM's products are made in small batches and hand-packaged at the brewery.

Bottled. Reddish black with lively head. Acidic black cherry aroma. Medium bodied, Clean maltiness, with some roasty coffee and near lambic-ish notes. Bitterish finish. As always with BFM their beers are interesting and very unusual.

The aroma is fantastic; sweet malt with strong notes of fruit and spices - I can't put a name on. The aroma also contains notes of yeast and some sourness - like it is found in the aroma of geueze. The color is an unclear dark yellow and it has a beutiful bubbly white head - though very fast disappearing. The flavor is very unusual; sweet though with a strong sour background of wheat malt and with strong spice notes - dominated by corriander and lemon. The corriander and the sour wheat lingers for a long time, just to turn into a lemony dryness. A very complex flavor - great for a Witbier. The palate is quite good. Great thanks to Alex (Fiulijn) for bringing me this beer.

[This beer has been added sage and "basilikum"] The aroma is sweet and sour with spicy notes. The color is an unclear brown and it has a light brown head. The flavor is somewhat sour but on a background of sweetness. It has notes of smoke and tar. An OK beer but more special than great. Thanks to fiuljin (Alex) for bringing me this beer.

Brown color, no carbonation. Deep spicy aroma: pain d'epices (local gingerbread), cloves, nutmeg, light anis, cinnamon. The promises of the spicy nose are not maintained by the flavors, the body resulting to be lighter than expected and the palate is N/A. Sometimes similar to a Fernet Branca.
Do you want a hot digestive? try the wonderful China Martini.

Bottled. Beautiful mahogany colour. No matter if it is served cold or at 60ºC the aroma is overwhelming with cinnamon and sugar. It is extremely sweet with clean mouthfeel. Cold it is strangely reminding of a typical Swedish breakfast dish (risgrynsgröt med kanel och socker). Warm it is a nice, odd warimg drink, reminding of Austrian jägertee, luckily the outside temperature was -9ºC, so this was a suiting drink at the time I sampled it. I really love the way BFM is experimenting, even if I don't always love their beer.

Dark brown color, with medium sized head, not persistent. Nice aroma, dark caramel and some cinnamon; light dark fruits, and very light star anise. Good body structure; caramel flavor, with a touch of dark chocolate and spice mix; the bitterness is reasonably low.
Pleasant winter beer, without the BFM signature.

It pours a cloudy brown color; with a medium head. Aroma of cookies, caramel, spices. It has a quite good body, with caramel flavor, some spices, strong bitterness, some sourness and high ending astringency. In little time it becomes less aggressive. Complex as usual.

Dark amber color. Fruity (apples, green apples), yeast. Astringent, with some malt roundness. Sour-bitter palate. Very original.

2002-01-05, 8-5-8-5-16=42
Cloudy brown color, beautiful creamy head.
Very nice and original aroma: sourness, malt, fruits (red currant…).
Good body structure and strength, very good mix of sweetness and sourness (both delicate), oak cask, little astringency.

Amber ale, misty, no head. Strong herbal aroma (smells the heather, the rosemary, ...). Sour, with the same evident herbal flavours too. A flop for this awarded brewery.
