Nous concocter la meilleure bière! Founded in 1997 by Jérôme Rebetez, who had formerly been trained as an oenologist, this tiny brewery has rapidly become known for making beers that stretch traditional beer style guidelines and use unorthodox ingredients. BFM's products are made in small batches and hand-packaged at the brewery.

(Bottle 75 cl) Unclear pale golden with a small, white head. Pronounced, soft wheat aroma with notes of citrus and coriander. Light-bodied, incredibly dry and sour with notes of grapefruit. 071105

Bottle. Spicy, slightly medicinal aroma. Very cloudy, golden colour. Small head. Dry and aromatic start, bitter middle. A little fruitiness in aftertaste, probably from hops.

Bottle. Spicy aroma. Cloudy pale yellow colour. No head. Refreshing flavour which is a little acidic and spicy. The acidity suits this beer quite well. A little watery, but that does not hurt my overall impression of it.

Bottled. Hazy pale bronze colour. Neutral aroma. Sweet and medium bodied, rounded mouthfeel. There’s some grassy hops and a resiny finish, but it’s all very discrete. Understated.

Bottled. Cloudy amber, very lively (more like explosive...). Yeasty pine needle aroma. Sweet nose with some acidity. Complex, vinous flavour with toffee and berries. Drier, resiny finish. Interesting and packed with flavours.

Cloudy amber color with a lot of carbonation and generous head. The aroma is malty, Belgian, with some of the BFM funkiness; fruity too. Good body strength; malt flavor, some residual sweetness, and strong funky character; strong bitterness too; there are spices, and some orange touch. Woody final, with warm alcohol perception.
Barely showing signs of age.

It has been double matured in the vat and bottled twice (quadruple fermentation); well… it hasn’t lost its lively characteristics, as the bottle almost exploded!
Muddy amber color; big head.
Very nice aroma, complex mix of malt, spices, fruitiness and some typical sourness.
Very good flavor, perfect balance of malt and hop, with some hidden hop aroma, a bit astringent, woody.
Excellent, and it will improve with time.

A dark red beer with no head. The aroma is sweet spicy combined with the notes of Danish Christmas cookies known as "brunkager". The flavor is of cloves and "brunkager".

Jet black; very dark brown head, fast disappearing. Nose of sweet chocolate, "pralines" (Belgian fine chocolates), chocolate truffles, lactose and - took me some time to recognise - cocos. Taste is an immediate impression of ink, then, very outspoken, bitter almonds. Further roasted malts, obviously, faint woody. Acidity appears in the finish, gradually but completely washing away the almond flaovur, becoming nearly lemony. Creamy mouthfeel, medium bodied, very much dry-out effect (I suspect quite some tannines). Long sourish aftertaste. This is a weird one, again. If it had kept to the bitter almonds, I would have thought it unique - though not my style. The reverting to the sourness makes it more my style - but much less remarkable.
