Description
Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Keg at LCBF 2019 - Friday evening session. Pours unclear purple-red with a light, frothy pink topping. Good stuff, nice tart berries, low acidity, some vanilla, blackberries. Light to medium bodied with average carbonation. Dry finish with further tart berry character. Solid.

Smakprov på Brewskival 2019. Snyggt knallröd med rosavit krona. Faktiskt mer rabarber är bär men så klart också hallon, röda vinbär, körsbärstoner, vinbärsblad. Frisk, bärig.

Smakprov på Brewskival 2019. Orange, smutsdisig med vit krona. Massor av juicig blodapelsin, marmelad, zest, syrlig med lätt beska. Gott.
