Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Keg at LCBF Friday evening session. Pours hazy yellow with a filmy white head. Has some notes of pine, lemon zest, general pithy citrus. Light to medium bodied with soft carbonation. Finishes with more pine needles, nice lemony tartness. Very decent beer.

Draught @ Brewskival 2019, Helsingborg, Sweden. Tart, sourish and acidic with some fruits, red berries. Okay.

Keg at brewdog Lothian road. Pours hazy yellow, nose is cheesy funk, toffee, oak, grapefruit, taste is tart, juicy, funky.

Keg at brewdog Lothian road. Pours murky orange, nose is massive mandarin, funk, some sherbert, taste is juicy orange, quite sweet, tart finish.

Draught, half pint. @Artbeerfest 2019, Caminha (Portugal). 13/07/2019. Hazy purple colour with a small pink head. Aroma is red berries, black currant, olives and soft yoghurt. Taste is the same, leading to a medium sour finish. Next one please!

Keg at Beer Central; hazy red pour, light pink head, aroma has red berries, taste has sour red berries, sharp black berries, slightly sweetness.

Keg at Beer Central; hazy peach pour with a thin pink head, aroma has grapefruit and orange, literally like drinking pink grapefruit breakfast juice.
