Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

[33cl can from Beer52.] A straw coloured pour with a loose white head; aroma of sour grains and farmyard; tart grainy taste - quite aggressive; then dry and vegetal to finish. Refreshing and not unpleasant.

On keg at Monty's Bar. Appearance - cloudy pink to red. NI head. Nose - raspberry ripple. Sour edge. Taste - rich raspberry smoothie with a dry sour edge to the finish. Palate - tangy and creamy in texture. Sour finish. Overall - superb! Go Johnny!

Keg at BD Castlegate. It pours crazy bright cloudy magenta with a pink - white head. The aroma is sweet - sour, juicy, tangy, bright raspberry, sour candy, rose Turkish delight, almond biscotti and rosehip. The taste is crisp, firmly dry, tart, puckering, zingy, fresh ripe raspberry aplenty, minerality, pomegranate, splash of rose and light tannin with a drying finish.. Medium body and fine, prickly carbonation. Fun and fruity. Decent gear.
