Jem Ham is Cheddar Ales' Head Brewer and Managing Director. Cheddar Ales, he started Cheddar Ales with the intention of making the best real ales in the local area. It began its artisan brewing activities in October 2006 and is based at Winchester Farm on the edge of Cheddar village, near the famous Cheddar Gorge.

We currently have five fermenting vessels, each one capable of holding 21.5 brewery barrels of beer, or around 6,150 pints. This gives us a weekly brewing capacity of around 30,000 pints, which may sound a lot but is certainly 'micro' in terms of the brewing industry. By hand-crafting such relatively small volumes, Cheddar Ales can ensure that character, consistency and quality lie at the heart of all our beers.

Bottle from Eltham Wines. Black pour with a tan head. Chocolate, cocoa, vanilla, coffee aroma. Flavours of chocolate, oats, coffee, cola. Malty-sweet finish. Quite nice.

Bottle. Golden orange with a thick though quickly fading head. Aroma of honey, grassy hops and some citrus fruits. Taste is slightly fruity and pleasingly bitter. Aftertaste is rather short. Solid mouthfeel. Not spectacular by any means but it’s a nice Ale. Also goes well with Whisky.

Bottle shared by daniele, thanks. Ancient golden hazy pour, tick off-white head (retention). Nose: oxidation, a bit off. Mouth a bit better, malty and a bit dusty.

Bottle, gift from daniele (thank you!). Dorata, limpida, schiuma bianca leggera, non molto persistente. Al naso note di mela, detergente per piatti, leggero erbaceo-floreale. In bocca è mediamente dolce all'attacco con finale amaro fiacco, un po' sporca. Corpo esile, carbonazione leggera. Ossidata.

Bottle. Beautiful copper coloured. Small head which disappears immediately. Weak aroma of malts only. Taste is caramell, biscuit, bread and bitter hops. Dry finish. Very low carbonation. Creamy mouthfeel. Ordinary but decent Bitter. I could spend a night with this one.

Cask at the Eldon Arms, Reading. A deep mahogany colour with a loose cream head; sweet, oaty aroma; rather thin in the mouth with a dry fruity taste, some tart cherry and plum; and a lingering fruity porridge finish.

Cask-conditioned at the Gryphon, Bristol 8/12/2016. Near black in colour with a moderately sized, beige, head. Aroma of milk chocolate, blackcurrants and toasty malts. Flavour had chocolate sweetness, berry sweetness, some liquorice and a gentle finish. Finish.
