Description
Jem Ham is Cheddar Ales' Head Brewer and Managing Director. Cheddar Ales, he started Cheddar Ales with the intention of making the best real ales in the local area. It began its artisan brewing activities in October 2006 and is based at Winchester Farm on the edge of Cheddar village, near the famous Cheddar Gorge.

We currently have five fermenting vessels, each one capable of holding 21.5 brewery barrels of beer, or around 6,150 pints. This gives us a weekly brewing capacity of around 30,000 pints, which may sound a lot but is certainly 'micro' in terms of the brewing industry. By hand-crafting such relatively small volumes, Cheddar Ales can ensure that character, consistency and quality lie at the heart of all our beers.

On gravity at the Bristol Beer Festival 14/3/08. Near black with a decent tan head. Sweet aroma of milk chocolate with some dark fruit and roasted notes. Flavour was also very sweet with lots more chocolate and a lactose finish. Good.

Cask-conditioned at the Hillgrove, Bristol 16/9/07. Amber with a decent white head. Aroma of fruity malt. Flavout started with some sweet malt before a dry, bitter finish. A drinkable session bitter but it doesn’t stand out.

Cask@GBBF2007. Orangeish golden colour, mediumsized white head. Aroma is fruity hops and also has some wooden hints. Flavour is sour wood, sour fruits and a lot of grassyness. Long wooden aftertaste.

Cask @ Volunteer Arms, GBBF 2007. Pours a slightly hazy golden color with an off-white head. Fruity malty and slightly hoppy aroma. Sweet malty and slightly fruity hoppy flavor. Long malty finish with a bitteraftertaste.

Cask gravity at GBBF 2007. I had this as AndrewC had it in Bath and raved about it. Copper, lasting beige head. Bit of diacetyl. Some bitterness on end. Yep diacetyl.

Cask-conditioned at the Hillgrove Porter Stores, Bristol 1/8/07. Amber coloured with an off-white, lacy head. Grapefruit hop aroma followed by a similar flavour and a big bitter finish. The brewer used to work for Butcombe and this was like a hoppier version of their bitter. Very enjoyable.

Cask gravity at Reading BF 2007. Amber, thin beige head. Bit of caramel on aroma. It’s a bitter. 4 bitters in on the second day, and I was bored so I went to the foreign beer stand.
