Can from Geers. Hazy golden, huge, frothy, white head. Aroma of vanilla, yoghurt, sour cream, raw rhubarb, plum compote, kiwi, lemon peel. Taste has sour plum, kiwi, mandarin & some lemon juice, mixing with accents of sour cream, a sweetish yoghurty body, giving off a vanilla hint too. Underlying there's yeast & something earthy from the rhubarb. Tart, subtly earthy hoppy finish, returning rhubarb, lemon & wheat. Medium body, oily texture, soft carbonation. It's almost unsurprising that Totem opted for an unusual ingredient to make this Sour 'Pastry'. Siren did something similar with their Royal Crumble. So it's safe to say that Totem is very much at the forefront of craft beer explorations.

Can from Geers. Cloudy black, stable, small, foamy, beige head. Strong aroma of smoked herring, extinguished bonfire, bacon, tobacco, charred beef, soy sauce, toast, fudge, dried fig. Taste has rather salty herring & bacon mixing with umami soy & leather, the malty sweet undercurrent has molasses, chocolate, fudge & fig whilst a smokiness is prominent throughout. Ends smoky-umami, tobacco & bacon again, decent amount of herbal hops, some 'powdery' chocolate, warming whisky-like alcohol. Full body, oily texture, soft carbonation. Bold creation by Totem; as much as I like Smoked & Stout this is perhaps a bit too much, so a delicate amount to taste is just about enough.

Can from Geers. Hazy yellow, stable, foamy, white head. Aroma of white pepper, lime, mandarin peel, melon, lychee, pineapple, yellow grapefruit. Taste has sweetish dank pineapple, melon & mandarin, accompanied by sourish zesty lime & carambola, a bit bitter spicy-yeasty in the middle with a doughy, almost tangibly 'oaty' malt body. Earthy hoppy finish, dry & grapefruity yet quite zesty too, well balanced by dank fruit & spicy yeast. Medium body, slick-creamy texture, soft carbonation. Good NEIPA, steering away from heavy juiciness and putting hop freshness at the centre.
