Established in 2016
After experimenting for a long time and stacking 20L brews in our kitchen, we are launching our first 500L brews in our small brewery in the Quartier de la Négresse in Biarritz in 2017. The Biarritz brewery sees the birth of all the first bottles of the permanent range of Brewery.
Quickly cramped, the second brewery was created in Anglet in 2018. Larger and more modern, it quickly allows us to push further experiments and to launch in parallel with the permanent range the very first cans in the summer of 2019 whose ephemeral recipes will be resolutely oriented towards hops and which are today our trademark.

440ml can. Jet black colour with late awkening, huge, creamy, moderately to mostly lasting, moderately lacing, dark brown head. Sweet-ish, chocolately, dark malty and mildly spicy aroma, notes of cocoa, dark chocolate, chocolate cookies, vanilla, cinnamon, whiffs of chili, chipotle, smoke. Taste is sweet-ish, slightly roasty, chocolately, dark malty and mildly spicy, notes of cocoa, dark chocolate, vanilla, cinnamon, hints of chipotle, slowly accumulating peppery spiciness remains in mild regions of the spectrum.
Viscous texture, smooth and soft, minimally cloying palate, medium to fine, dense, creamy carbonation.
Well balanced, harmonious composition, not overspiced, very homogeneous, smooth and creamy - very good!

440ml can. Hazy, orange, dark golden colour with average, creamy, moderately lasting and lacing, white head. Mosaic dominated, juicy, tropical fruity, slightly citrusy and minimally leafy, hoppy aroma, sweet-ish, wheaty and oaty malty background, notes of passion fruit, some blueberry, mango, hints of grapefruit, a touch of pineapple and melon. Taste is sweet-ish, wheaty and oaty malty, juicy, tropical fruity and slightly citrusy fruity hoppy, notes of passion fruit, mango, melon, some grapefruit, blueberry, ovetones of mandarine and sweet orange; rudimentary fade-out of the malty basis leads to a less creamy, more watery and minimally alcoholic finish.
Creamy texture, smooth and soft palate, medium to fine, dense, creamy carbonation.
Very harmonious and balanced, maybe a tad too sweet on the malty side; but definitely a very well composed hop bill with on the one hand self-contained, on the other hand complementary hop flavours. Highly drinkable, very tasty - great!

Bottle. Color: Black, no head. Aroma: Sweet, Bourbon, vanilla, chocolate, spicy Rye, roasted malt. Taste: Again sweet, Bourbon and vanilla. Subtle fruity orange / marmalade notes, spicy rye, dark chocolate notes and roasted malt. Hoppy background. Sticky mouthfeel. Over medium sweet, moderate to over moderate bitterness. No carbonation. Full body. Plus for the orange / marmalade notes, otherwise it would be a bit boring, I presume.

440ml can. Murky, dark yellow-ish, golden colour with average to huge, frothy, slowly osteoporosing, minimally lacing, white head. Juicy, (tropical) fruity, hoppy aroma, oaty and slightly wheaty malty background, notes of mango, passion fruit, physalis, some kiwi fruit, melon, a touch of orange and lemon peel. Taste is initially slightly bitter, zesty, citrusy fruity and tropical fruity hoppy, sweet-ish, creamy, oaty malty basis, hints of lemon, kiwi fruit, melon, some gooseberry, rhubarb; later more homogeneous, the bitterness fades out.
Creamy texture, smooth and sft palate, medium to fine, soft, mildly prickly carbonation.
Smooth, homogeneous, a tad disharmonious due to a minimally unintegrated, zesty interference - pretty decent.

440ml can. Hazy, dark yellow-ish, golden colour with average to huge, thick, dense, creamy, moderately lasting, minimally lacing, white head. Tropical fruity, slightly citrusy fruity and minimally earthy-leafy, fruity, hoppy aroma, wheaty and oaty malty background, notes of passion fruit, mango, blueberry, a touch of juniper berry, minimally perfumed, citrusy interludes with a touch of orange, mandarine. Taste is minimally zesty, bitter, citrusy fruity, slightly tropical fruity and minimally earthy-leafy hoppy, minimally diluted notes of orange, mandarine, mango, some passion fruit, blueberry, a touch of juniper berry, a minimally perfumed touch of lemon, a fruit acidic tart-ish touch as well, oaty and wheaty malty basis with some residual sweetness.
Minimally creamy, watery texture, smooth and soft, minimally greasy, simultaneously minimally dry palate, medium to fine, mildly prickly carbonation.
Harmonious and balanced, quite multifacetted, nice exposition of the Mosaic flavour spectrum - pretty decent.

Taste is mildly bitter and minimally fruit acidic tart-ish, tropical fruity hoppy, oaty malty basis with some residual sweetness, hints of mango, white grapes, some passion fruit, a touch of grape sugar.
Creamy texture, smooth and soft palate, medium to fine, dense, mildly prickly carbonation.
Harmonious and balanced, fairly fruity, nice creamy mouthfeel - enjoyable.

Relatively weak, tropical fruity, slightly vinous fruity, hoppy aroma, hints of passion fruit, white grapes, a touch of gooseberry and kiwi fruit, oaty malty background. Taste is mildly bitter, minimally tart-ish, vinous and minimally tropical fruity hoppy, oaty malty basis with low residual sweetness and a minimally sugary (grape sugar) touch, hints of white grapes, gooseberry, a touch of unripe kiwi fruit, lime and melon.
Creamy texture, smooth and soft palate, fine, soft, creamy carbonation.
Refreshing, light, straightforward - very nice.

Cloudy light yellow to beige beer, small creamy irregular white to off-white head, a little stable, somewhat adhesive. Aroma: nice, pretty dank, a bit floral, fruity, some pears, some tropical fruits. MF: ok carbon, medium to full body. Taste: lots of citrus, grassy, bitter, some grapefruit, hoppy, resinous, nice! Aftertaste: hoppy, a bit sweet, malty touch, juicy, resinous, mango, oranges, orange peel.
