At the Rookery, the fermentable in all our recipes is honey and we never use sugars or syrups. All the flavourings are high-quality ingredients and never artificial flavourings. Most of our meads use hand-foraged ingredients, concentrating on Scottish native species such as meadwort, heather, silver birch sap, crab-apples and a range of hedgerow berries.

70cl bottle from Beer Ambleside - clear golden with no head. Lush boozy nose, syrupy mouthfeel, loads of sweet floral honey. Nice bit of spice, some coconut and tropical fruit, really warming.
