Description
Based in Perthshire, Scotland. We try to make light, modern mead with flavours inspired by archaeological finds in Northern Europe. The Rookery looks to evidence in the historical and archæological record for source material, then back-engineers these ancient drinks to create modern and exciting products.

At the Rookery, the fermentable in all our recipes is honey and we never use sugars or syrups. All the flavourings are high-quality ingredients and never artificial flavourings. Most of our meads use hand-foraged ingredients, concentrating on Scottish native species such as meadwort, heather, silver birch sap, crab-apples and a range of hedgerow berries.

Bottle in the grassmarlet. Pours golden, nose is honey, beeswax, taste is sweet, juicy, honey.

Bottle at cgarvieuk's. Pours clear gold. Aroma is honey, mead, spruce, citrus, flowers. Body is heavy, but not super sweet, lots of flowers and spruce and citrus and menthols indeed. A bit artificial. Not greatly balanced, but not bad either.

Bottle at Craigs, opaque pale yellow color, aroma of spruce, glue and honey, flavor of spruce, spice and honey that gets stronger in time and some candy, quite sweet but not over the top. Very nice.

Cask at the GBBF 2018 day 1 07/08/2018. A clear golden yellow coloured pour with a no head. Aroma is woody SWeet honey, meaty honey. Flavour is composed of semi sweet tangy honey, raspberry, leafy, burnt honey.. Warming solvent, honey.. Palate is semi sweet, alcohol..

Polypin at GBBF 2018. It pours clear oily yellow with no head. The aroma is sweet, oily, honey, umami, tart, vinous, raspberry leaf and honeycake. The taste is slick, oily, tangy raspberry, during, oaky, dull solvent, raspberry leaf, honeycake, tannin and fruit tea with a tangy fruit finish. Medium body and slick mouth - feel. Interesting tart raspberry vibe.

Bottle split at Bodney, thanks to Fergus, 12/04/18. Light faded out golden with no head. Nose is herbal, sprucey tones, afterhave, citric zest, grassy. Taste comprises bitter sweet tones, honey, spice, floral, herbal bite, less spruce than on the nose. Full bodied, oily feel, sweet cloying climax. Ok mead.

Shared 350 ml bottle at local tasting, from Aberdeen Country Fair. ABV is 17%. Golden colour, some ginger sediment. No carbonation. Boozy aroma of heather honey and ginger, some fusel alcohols. Sweet flavour, distinct notes of heather honey and ginger. Some boozy notes too. Nice warming mouthfeel from the ginger. Hints of walnuts in the aftertaste.

Shared bottle at RB/HD on board Fridtjofen Hazy pale straw colour. Strong aroma and taste of curry, meat stock, vegetable stock, ginger and umami.
