Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Tap at Planet Oedipus festival. Hazy pale straw with white head. Sage, chamomile tea, lemon, peach candy, very very herbal with medicinal touch. Medium sour. Light bodied.

7 3 7 3 14 Draft at Planet Oedipus ’17. Very hazy golden with a white head. Aroma of lemon, herbs, sage and yoghurt. Flavour is light sweet and moderate sour. Light to light medium bodied with soft carbonation.

Bottle shared at Chris & Ruth’s pre-GBBF Shindig 2017 - Part 2. A almost clear pale yellow beer with a small white ring. Aroma of soft tart fruits, pale malt and yellow fruits. Taste of tart fruits, yellow fruits, some herbs.

Bottle at Le Local, somewhat past best before date I saw after I ordered it... Slight hazy golden with off white head. Soft caramel, light citrus hops, quite flowery too. There’s some nice hops with soft caramel malt base that’s still quite crispy. Light sweet and just medium bitter. Medium bodied. Still quite nice, though it has probably seen better days.

Aroma: Burnt, tar, smoke, very dark malt.
Taste: Dark malt, burnt, peat, smoke/tar. Quite nice.

Black with little brown head. Aroma is coffe fark chocolate dried leaves milk chocolate. Taste is sweet smooth chocolate with some slight sour juice and bitter chocolate. Low carbonation actally chalky. Bity in the finish. Not bad.

A dark brown porter with a thick collapsing brown head. In aroma, nice chocolate malt with light coffee notes, vanilla extract, alcohol warmth, very nice. In mouth, a nice chocolate malt with light coffee notes, grassy hops, light mineral notes, light herbaceous character, pleasant. On tap at vices et versa.

A hazed golden Berliner Weisse with a thin white head. In aroma, light fruity malt with light acidity, light mineral notes, Epsom salts, spoiled milk, weird. In mouth, a nice sweet fruity lemony malt with light milk, feta cheese, weird but nice. On tap at vices et versa.

Bottle at home, 2nd July 17. Pours black and holds a bubbly tan head. The aroma is ash, earthy, meaty, yeast, dark chocolate. Taste is dark roasted malts, leather, yeast, coffee, meaty, ash, slight smoke. Absolutely delicious beer.
