Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Sights & Swills Summer Holiday Beer#81. PONTORSON. Perhaps a little more of the black IPA style than bitter here for this towards black in colour brew. It's not really 'bitter' at all and the hop imparts fruitiness in both aroma and taste.

On tap at Carburant, pours a dirty dark brown, no head. Aroma is vinegary, with some tartness, toasted malt, and leather. Flavour is awful, with tons of balsamic vinegar, not much stout character other than booze. Amazes me that this has been brewed multiple times. Not good at all.

On tap at La Robe & La Mousse, pours a clear golden with a small white head. Aroma has a strange earthy hoppiness and bready malt. Flavour is better, revealing spicy, earthy hops, light pine, and bready malt. Not the best hop expression, but the structure is good. Solid.

Aroma of roasted malt, coffee, tropical fruits, some pine, hint of coffee, hops. Flavour is light sweet with a bitter finish. Body is a bit thin, however this is definitely a pleasant Black IPA. Remarkable, what they accomplished with the low ABV.

Aroma of tropical fruits, malt, citrus, orange, grapefruit, caramel, yeast, floral, hops. Flavour is light to moderate sweet with a lovely bitter finish. Very juicy and fruity Double IPA, really tasty.

From tap at Planet Oedipus ’17. Aroma is dark malt, roast, lots of oak, chocolate, with gentle notes of whisky. Flavour is light sweet and sour with a little bitterness. Body is medium. Subtle with lots of wood and dark malt, good stuff.

From tap at Planet Oedipus ’17. Aroma is fruity hops with lots of zesty citrus, tropical notes, grapefruit. Flavour is light sweet with a dry bitter finish. A surprisingly fine French IPA, and Mont Salève has a knack for surprising me.

From tap at Planet Oedipus ’17. Well-hopped aroma with big citrus, orange, light wheat, bitter tropical hops, and fruit peel. Flavour is moderate to medium sour. Body is medium. Nicely sourish and quite fruity, one of the surprises at the festival for me.

Draught Aged Sample (2019) Very dense & ultrafine yellowish head, rather stable over fully hazy orange-ochre beer. Sourish nose with citrus, gurkins, lactic acid, preserved orange peel and a hint of ginger. Lactic acid, with just a touch of acetic, winevinegar and lots of citrus. Again both vinous an spicy, spoiled wine, pickled fruit and citrus. Acidburn and -thinning, not very carbonated; bit oily texture. Nice, but a tad towards the acetic. I'd have trouble finishing a 75cl bottle of this.
