Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Bottle, past best before date. Bit hazy deep red to purple with fizzy pink head. Spur grains, oak, very fruity grapes, light red currant, blackberries, soft vanilla, wheat. Solid sour, light sweet. Medium bodied.

Perfect smocked beer, lovely side of smocked malt, smocked beech, bacon, not to sweet that it is important for me, dry and hop finish, 19.05.19, at Epalinges, purchased at the pibar.

Tap at La Fine mouse, Paris, 29th April 2026. Pours chestnut brown and clear. Taste is tart, caramel - odd, and not for me - ended up knocking the glass and smashing it all over the place and myself - wasn’t that bothered about losing the beer

Black with a mid-size beige head. Very sweet earthy/vegetal with light coffee, chocolate, spice, a hint of oak, floral. Full bodied. Finish is sweet malts and chocolate. The initial aroma is off-putting but everything after is quite nice.

330ml bottle from Le Chais, Hazebrouck. Pours a cloudy piss yellow, large pure white head that forms a pillow of foam above the glass. Aroma of fruity gooseberry. Decent, very decent for AF.. good hop presence, nicely fruity, a hint of gooseberry, lemon, dank leaf.. not bad.

It is an average pils, we could say. Nice troubled orange yellow color, thin foam, well balanced, hop, good, drinking it a long time ago.

330ml bottle from L'Ecume des Bieres, Saint-Malo. Pours red/brown with a white head. Aromas & tastes of tangy fruits. Moderate body. Slightly sweet but more acidic in the finish.
