Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Bouteille 75cl, bottled 17/09/2021, BB 17/09/2023, partagée avec Philippe.
Couleur noire, col épais crémeux tenace moka.
Arôme est plaisant et va de suite vers les indications de l'étiquette - sorte de gros stout - winter warmer avec une poignée de all-spices - je retrouve des effluves de girofle, cannelle, réglisse avec une belle présence de malts en rétro-nasal - chocolat noir et au lait, le tout est de suite suivi par une fraicheur rappelant la pelure d'orange/Mandarine Napoléon mais qui est plus l'apport du Cognac - la mise en fût pendant 30 mois est massive et reste pourtant judicieusement placée.
Palais est délicat et complexe, le tout passe très bien avec les 9%. Premier abord pas mal d'épices sans jamais passer pour surfait - note de cannelle, girofle, star anise/réglisse, chocolat noire, caramel et grillé. Effervescence moyenne - chocolat orangette - Cognac reste cependant discret en fin de bouche tout en étant présent.

8-4-8-4-16 Bottle, three months after bottling. Pours hazy pale yellow, with a big creamy head. Aroma is grainy malts with hay, wheaty minerals and yeasty esters, as well as herbal hops with citrusy notes. Light body, with soft to average carbonation. Flavour is yeast and grainy malts with cereals and hay, as well as herbal hops with grass and citrusy notes. Very refreshing, quaffable and moreish.

Deliberately soured farmhouse ale of sorts, containing Gewürztraminer wine lees and partially aged on oak barrels (which I assume contain lactic bacteria in this case). Pale greyish off-white, irregular, large-bubbled, medium sized, quickly opening but edge-retaining head leaving a thin greyish veil in the middle, over a cloudy ochre robe with deeper nut-brownish hue - somewhere in between a dark beer and a blonde beer, a 'dark blonde' if you will. Aroma of overripe medlar (strong), wine must, cooked pear, old orange juice, medium dry sherry, stewed yellow plums, pronounced vanilla-scenting oak wood, some freshly fermented farmland, musty cellar, clove, grape skin, vague note of beef broth somewhere (proteins). Refined and fruity sourness in the onset, plum, medlar and blackberry, feeling like 'autumn fruit' in a way, refined carb, smooth and somewhat vinous body; bready core, dried by lactic and fruity sourness in a mellow, pleasantly refreshing way, lots of ongoing plum- and medlar-like fruitiness, orange hints here and there accentuated by the sourness, and a lovely sweet-bready, almost 'speculooskruim'-like yeasty and malty play in the end, where the Gewürztraminer adds a soft, juicy 'grapeyness' and the wood starts to scent like vanilla, revealing its oak character. Ends dryingly tart but lively juicy, very fruity (as in actual fermented fruit juice - the wine lees in this case) and pleasantly bready. Quite 'wild', a bit 'oud bruin'-like in its general flavour profile but frankly a tad messy as well, albeit in a most charming way, a way normally only the Belgians seem to get away with (sometimes); I have argued before that France should connect its new craft beer elan with its wine heritage, and if any French brewery were to make a clear step in that direction, I guess it had to be Mont Salève. Curious how this would evolve over time, too...

Sour ale fruited with three different Italian grape varieties, by this familiar French craft brewer. Loose and irregular, open, small, off-white head, dissolving over a cloudy dusty pinkish-tinged 'dirty orangey blonde' beer. Aroma of grape juice for children, melting butter, blueberry crumble, freshly baked cookies, fruit yoghurt, strawberry cake, rosehip, sourdough. Sour onset, very fruity and lively with hints of - obviously - blue grapes but also strawberry, apricot and sweet cherry tomato, finely tingling fizz, smooth and bit vinous body; lingering yoghurty lactic tartness alongside a cookie- and biscuit-like maltiness with this weird buttery flavour spread out on top, working towards a rather 'dirty', but juicy and fruity finish where the sweet ripe berries and soft sweetish grape effects return in full glory. Too yeasty with some weird and unexpected side flavours, I believe this idea could have been executed much better.

330 ml bottle, as Mont Salève Hors-Série Cerises, from Vaaland, Bryne. ABV is 4.2%. Gusher bottle. Hazy golden colour (no cherry colour), small white head of poor retention. Aroma of lactic acid, cherries / cherry kernels and marzipan. Very sour flavour, lactic acid galore, notes of sour cherries, lemons and marzipan. Way too sour for me, won't buy again.

Cloudy pale red beer, practically no head. Aroma: malty, oxidized, funky, weird. MF: ok carbon, medium body. Taste: very sourish, acidic, bitter, fruity notes, tannins, not bad. Aftertaste: dry, spicy, fruity, alcohol, bitter, sour, blackberries, not bad.

Cloudy blond yellow beer, small creamy off-white head, unstable, non adhesive. Aroma: very funky, weird, a bit dirty, citrus notes, herbal, oxidized. MF: ok carbon, medium body. Taste: nice and fruity, lemony, pretty sweet and sugary, grape juicy, lovely! Aftertaste: a bit sourish, fruity, juicy, sweet, nice acidity, pleasant stuff!

Couleur fine rosée/cuivre, col blanc peu tenace.
Arôme aux effluves plaisantes fruitées oscillant entre fruits rouges et noirs.
Palais est agréable sur les bretts, rondeur discrète des malts, fini légèrement poivré, cépage intéressant avec ce côté marc de raisin résiduel qui apporte un fruité entre cerise noire, cassis et mûre, finement tannique sur la fin.

Dorée pâle, col épais blanc retombant rapidement.
Arôme est frais fruité, le fruité et puissance du raisin résonne tout en ayant en retrait des notes de barrique, boisée, fruité entre agrumes et le raisin, le tout étant très frais et aromatique au nez.
Palais présente une belle note de bretts avec un côté funk délicat - l'apport des agrumes ne vient pas rajouter encore à l'acidité et funk, la balance se fait par le côté Gewurztraminer qui donne une petite sucrosité naturelle résiduelle, le tout avec un retrait finement tropical et touche verte. Assez unique.
