Description
Casita Brewing Company is owned and operated by Ryan and Mahalia Witter-Merithew. Ryan is a seasoned brewer, having worked as a professional brewer in Denmark, England, and of course, the United States over the last thirteen years. Mahalia is the heart of the business and the president of the company.
Casita started as a contract brewery at Hill Farmstead Brewery in Greensboro Vermont in 2015. In 2017, we moved this business to our home state of North Carolina, where we produced our beer at Duck-Rabbit Brewery in Farmville. In 2020, we are set to open our very own brewery and taproom in Mahalia's hometown of Wilson, NC. We will be open to the public by August 30th.
Over the years we have brewed over 50 different beers under the Casita name. Ryan is excited to bring this creativity to our new taproom, where we will be brewing some old favorites as well as some new beers we haven’t even dreamed of yet.
The logo for our brand is a letter 'C' in the shape of a little house. The 'C' of course stands for Casita, but it is our hope this 'C' will not only represent our brand, but a lot of our other favorite words that start with 'C', like craftsmanship, creativity, compassion, and community. These are the key principles of our business.

Aroma is moderate malty, pale malt, chamomile, orange, floral. Flavor is moderate sweet with a long duration, spicy, fruity, citrus, chamomile, floral. [ As Casita CervecerÃa / Magic Rock El Locuelo Pomelo ].Unclear matt light to medium yellow color with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, wheat, moderate yeasty, grapefruit, lime, juniper, baking yeast - saison yeast. Flavor is moderate sweet and light light acidic with a average to long duration, tart lime - grapefruit - peel, juniper, yeast. Body is medium, texture is oily to watery, carbonation is soft. 375mL bottle, sent from yourilevesque (thanks a lot, Youri), pours a deep dark brown / near-black with a large brown head - looks slightly disturbed with the huge head. Aroma brings out leather, tart dark fruits, candied sugar, but none of the tea or lavender. Flavour is similar, with lots of leather, tart dark fruits and candied sugar. There is a light earthy quality, likely from the tea. No lavender detectable. Carbonation is high and hinting at a slight disturbance / possible infection, but it works out fine. Off but decent.

Bottle from PhillyCraft. Thanks Vin! It pours a dark brown color with a massive tan, rocky head that makes interesting formations as it shrinks. Seriously takes up 3/4 of the glass. The aroma has notes of tea leaves and molasses. A little black pepper and maybe some cocoa and cream. Not getting the lavender other than the tea-like quality. The flavor is a bit smoky with more black tea and savory notes of smoked/spiced meat. Some mild notes of blackberries and lavender. Very mild acidity in the back of the throat as it goes down. The mouthfeel is fairly light, but has some beefiness I guess from the lactose. Not really sweet at all though. Very well attenuated. Mild hints of pepper, wood and burnt toast in the finish. This was a very interesting beer, but not something that is usually up my alley personally.

Draught@CBC 2016 (Blue Session).Hazy yellow colour, small white head. Aroma is sour wood, some lactic notes as well as mild herbal notes. Flavour is fruity, floral, very tart and some dry wooden notes to it as well. Yet nicely balanced.

Bottle: Poured a hazy pale yellow color ale with a nice white large foamy head with good retention and some lacing. Aroma of tart notes with subtle lime notes also perceptible. Taste is a mix of lime and subtle tart notes is pleasant. Chili and honey notes are harder to detect. Body is full with limited filtration and good carbonation. Enjoyable with good level of complexity even though some ingredients are harder to detect then others.

Bottle shared at the level 42 tasting 7/9/2016. Many thanks to Leighton for this one. A hazed dark brown coloured pour with a whisy medium tan head aroma is dark toasted malts, pear, woody, guava, apple, earthy. Palate is slightly tangy and frothy, musty, airy carbonation, dryish finish. Flavour is complex, woody sour, prickly pear, dark toast, grapey fruit, slight liquorice. I like it.

Bottle big thanks to Leighton. It pours hazy dark brown with a thick light tan head. The aroma is earthy, musty, funky, wood, dirt, dried fruits, vinous, floral, spice and a touch of smoke. The taste is dry, bitter, vinous, stewed orange, peach, funky, floral, musty, leather, drying astringency, tannin and some balsamic vinegar with a dry woody finish. Medium body and moderate. Funky and fun.
