Always experimenting and expanding
We brew in small batches in our 15 barrel brewery and we’re always experimenting with new recipes. Dan and Pat ,with previous experience from the wine world, get to marry the fascination with the natural world and the art and science of fermentation.
Dan keeps cooking up some good recipes and Patrick the builder keeps finding ways to add more tanks and increase our production.

Can split at L6, picked up from a BD bar, 20/11/19. Hazed golden orange with a decent off white cap that retains well. Nose is grass, ripe melon, pine, orange pith, grapefruit splash. Taste comprises melon, grass, orange pith, toasted malts, light pine. Medium bodied, fine carbonation, semi drying close splashed with balanced slightly grassy hop bitterness. Decent enough easy drinking IPA.
Weak body. Watery.

Can shared with TdeRoeck. Hazy yellow to light orange color, medium sized white head. Aroma is resinous hoppy. Flavor is malts, hops, resin, pine, bitter, typical old school resinous piney DIPA. Love it.

21/XII/19 - 1Pt. can @ home, BB: 3/II/20, canned: 3/X/19 - (2019-2167) Thanks to Benzai for sharing the can!
Mainly clear orange beer, very big creamy foamy yellowish head, very stable, adhesive, leaving a nice lacing in the glass. Aroma: nice, old school West Coast IPA? Fruity touch, lychee, some canned pineapple, orange flavoured candy. MF: ok carbon, medium to full body. Taste: sweet start, lots of (aged?) hops, pretty bitter, orange peel, some grapefruit, resinou, bit piny, some alcohol. Aftertaste: more fruity notes, old school bitter ipa, little sweet and malty, some citrus, floral, slightly soapy, lovely old school West-Coast (D)IPA, bit oxidized though.

Can shared at the Columbus tasting 20/11/2019. Many thanks. A mostly clear, golden yellow coloured pour with a loose white head. Aroma is semi sweet, woody citrus, tangerien, wheat. Flavour is composed of soft wheat, cereal, honey, green hop, pils, pine needles. Palate is semi sweet, sticky resin, sticky hop, moderate carboantion. Ok.

Can, picked up at the brewery. Also on tap at the brewery. Milky gold. Sturdy, shiny, lasting, bright white head. Nose has clean and fresh citrus. Dried peel. Creamy malt. Some sweet biscuit. Taste is sweet and creamy. Moderate citrus bitterness. Medium body. Fine carbonation. Zingy bitterness to finish. Nice, although the malts are a bit overly creamy and sweet, for me.

From a growler at Foley, courtesy of the Foley folks. This is the last they had. Also found it on tap at the Zen Barn, Waterbury Centre, VT. This is four year barrel aged, apparently. Mostly clear, pale gold. Thin white head. Nose has fusty oak. Next morning wine dregs. Overripe pineapple. Sweet cherry. Dirty, sweaty brett. Taste is fruity and sweet, with a bretty, lemony, grape juice tartness. Oily on the palate. Fine carbonation. Light acidity. Tart and dirty brett finish. Awesome beer.

On tap at the brewery. This rating based on the growler we picked up. Dirty, deep amber. Fine swirl of white head. Not a looker. Nose is big on the wine barrel. Tons of oaky vanilla. Red wine dregs. Some tobacco leaf. Fusty grape. Notes of fruit, along the lines of peach and lychee. Sharp brett. Leather. Fruity sweat, if ever that was a thing. Taste Is tart and dry, with a big fruit sweetness. Medium body. Tart and lightly acidic. Fine carbonation. Lingering dirty, earthy fruit tartness to finish. Lots happening here. Great stuff.

Level 6 tasting. Big thanks to Cloin for the can. Light haze on this gold beer, good pale cream colour head. Airy palate, semi dry, decent fine minerally carbonation. Thin but sweetish malts. Decent lemon orange hops, mostly peel. Light crisp pine. Some yellow grapefruit on the dry crisp finish. Tidy.
