Always experimenting and expanding

We brew in small batches in our 15 barrel brewery and we’re always experimenting with new recipes. Dan and Pat ,with previous experience from the wine world, get to marry the fascination with the natural world and the art and science of fermentation.

Dan keeps cooking up some good recipes and Patrick the builder keeps finding ways to add more tanks and increase our production.

Pours slightly hazed gold into a tulip. Bright white head with medium retention recedes leaving spider lacing. Sweet mango and passion fruit aromas. Soft and dry with papaya and pineapple upfront turning to dried mango in the lasting finish. Nice.

Poured into a becher pint glass, the appearance was a nice soft pale burnt yellow chalky color with a two finger white frothy head that fell off at a fairly quick pace. Some messy lace.
The aroma had some ruby red grapefruit pulpy sweetness and it’s rind in a bitter fashion rolling over some light acceptable sugary notes over a sly little wheaty bite at the end.
The flavor wants to lean towards the sweet side but an ample amount of bitterness from the grapefruit rind pushes the brink to end up blending better than I think. Nice controlled aftertaste with a brisk bittersweet finish.
On the palate, this one sat about a light to medium on the body with a pretty good sessionability about it. Carbonation felt good and the ABV felt perfectly fine. Some harshness, but the wheat seemed to control that a little bit.
Overall, nicely done wheat IPA with that grapefruit in this one really made it all come together extremely nice. Hope you like this one, Corey!

Bomber, undated, under a month old, drunk 3/6/17.
At first it pours almost fully clear, with a copper-to-blonde color and good carbonation creating a staunch, white head. Towards the end of the bottle, I mixed in some of the copious sediment to again see more about how the turbidity affects the NE IPAs.
Initially the nose is very light, bright and juicy with the malt hand-in-hand with the hops. Thankfully the malt only adds rich honey notes so it works nicely with the juicy mango, ruby red, lychee and pineapple here. Some varied floral, dank and spicy characteristics deepen the complexity with a strong peppery character on the end. Clean and with no alcohol noted.
It begins a bit shy, though the malt is soft, supple and moderately sweet, though properly attenuated. Juicy mango, nectarine and orange provide quite a bit of flavor and very low bitterness. Just enough spicy hop character balances the finish but it’s still missing something. Towards the end, I gently mix in some sediment and I’ll be damned if it wasn’t a completely different, much better beer. Much more fresh, dank, spicy hop notes and all sorts of greenery explodes on the palate with lime, kumquat, papaya and pineapple. Slightly more bitterness is apparent and perhaps some earthiness dries out the malt more fully. Very nice stuff, however you drink it and clean and free of alcohol and resin.
