We brew in small batches in our 15 barrel brewery and we’re always experimenting with new recipes. Dan and Pat ,with previous experience from the wine world, get to marry the fascination with the natural world and the art and science of fermentation.
Dan keeps cooking up some good recipes and Patrick the builder keeps finding ways to add more tanks and increase our production.

Poured into a nonic pint glass, the appearance was a glossy burnt yellow to orange color. No head. Minimal speckled lace.
The aroma takes sweet pineapple, pine and grassy sweet to bitter hops. Lemon zest.
The flavor yields to the bitter side and pushing the pine up front. But this seems to start to imbalance the great aromas I smelled. Big piney aftertaste crushing the finish dryly.
On the palate, this one sat about a light to almost medium on the body. Fairly crushable. Carbonation felt fine but bitterness seems bolder than expected.
Overall, great aroma but a bit overly harsh in the feel, and didn’t seem to come together in the flavor. That’s a shame, I usually love their IPA’s, what happened here, Foley, you’re better than this.

Poured into an English pint glass, the appearance was a semi-hazy burnt crisp yellow to bronzed muddled orange. No head or lacing.
The aroma started off with some grassy bitter to sweet hops, mild earthiness, and a nice balance of spiciness. Mild citrus hops.
The flavor takes the spiciness of the hops and moves it forward above the earthiness and bitter to sweet grassy hops. Intentional soapiness seems to come out smoothly yet mildly. Citrusy to grassy aftertaste leading into the finish.
On the palate, this one sat about a light to medium on the body with a great sessionability about it. Mild carbonation. Good grip of the bitter hops enslaving the harshness appropriately.
Overall, good English styled IPA with a cleaned up yet gentle soapiness ever so mild but definitely telling me it’s English through and through.

Poured from bottle thanks Airforcehops black pour with a thin head. Aromas of roasted malt chocolate vanilla coffee. Taste is nice and creamy barley malts roasted coffee and chocolate. Nicely done.

22oz. Bottle purchased at CBC, Waterbury location. Appearance as a solid black with a fast dying white head very little lace. Aroma is coffee, cocoa, and melted chocolate bar.
Flavor is bolder coffee, roasted grains, barley, and a hint of bitterness. Maybe a coffee bitterness or acidic hint that indicates the beans starting to fall off. Creamy texture with a medium body. The ABV is pretty well masked. Overall, the coffee and cacao play well together. Mostly above average.

Tap, at the brewery. Very dark brown. Thin, dense, pale beige head. Nose has rich roast coffee bean. Dark chocolate. Robust, roasted malts. Hints of dark, dried vine fruit. Taste comes over sweeter than the aroma suggests it might, and is fruity and chocolatey, before the coffee bitterness comes in. Smooth mouthfeel. Surprisingly light. More coffee and chocolate on the finish. Very nice.

Tap, at the brewery. Chalkboard stated 7.2%. Deep brown, with a foamy, beige head that recedes to a ring. Nose has soft chocolate malts. Maple syrup. Some fruity, nutty chocolate notes. Taste is chocolatey sweet, with a nice balance of soft, piny bitterness. Smooth, fairly rich mouthfeel. Warm sweetness, gets nutty and lightly dry by the end.

Tap, at the brewery. Hazed gold. Decent, lasting, foamy, white head. Nose has fairly intense, dank and cheesy hop. Quite savoury, with lots of herby and floral notes. Some pine needle and ripe stone fruit. Taste is full on, dank bitterness. Some light sweetness, but it’s mostly a bruiser. Certainly easy drinking, though. Finish gets a little less bitter, and even dries out somewhat at the end.

Tap, at the brewery. Light amber, gold. Good, dense, lasting, white head. Nose has ripe citrus fruit. Quite dank and piny. Some oily hop. Some flinty, mineral notes at the back. Taste is pretty sweet firstly, with a spruce like bitterness. Drinks easy for the ABV, although it’s maybe a little sweet. Bitterness lingers on the finish.

Bottle purchased at Craft Beer Cellar, Waterbury. Almost clear golden color with appropriate carbonation and head. Nose is grapefruit, orange, lemon peel. Taste nice mix of citrus, grass and light danky pine resin. The light sweetness from the malt gives a good balance without it getting to far out of whack to either side. Overall, I think this is a tad above average.

Tap. Blackback, Waterbury, VT. Hazy, pale gold. Film of sticky, white head. Nose has luscious, fresh hop. A little sticky and sappy. Some apricot jam. Some oily herb. Taste has a sticky sweetness, turning pine needle, resiny bitter. More stickiness on the palate. Lingering bitterness on the finish.
