Always experimenting and expanding
We brew in small batches in our 15 barrel brewery and we’re always experimenting with new recipes. Dan and Pat ,with previous experience from the wine world, get to marry the fascination with the natural world and the art and science of fermentation.
Dan keeps cooking up some good recipes and Patrick the builder keeps finding ways to add more tanks and increase our production.

Borken pullin’ a whale out of the back of the fridge! Pours clear golden orange, medium white head, creamy, dissipates slowly, nice lacing. Aroma is pine, dankness, spruce tips. Flavor is light plus sweet, medium plus bitter, a bit old school despite the clearly new-school hop choice. Medium body, kinda harsh actually.

Bottle, thanks to Yourilevesque. Pours hazy bright yellow with large foamy off-white head, citrus aroma, high carbonation, bitter citrus peel taste, thin body, long bitter citrus finish. Very citrusy and refreshing.

Poured into a snifter, the appearance had a dark brown close to black color with a quickly dissipating finger’s worth of white to off white foamy head. Sly sticky lacing, ends up sliding nicely.
The aroma captures subtle smoke, dried coffee bean, cocoa nibs (almost powder-like) and then smooth roastiness.
The flavor brings all of the previously mentioned aromas together blending sweet with the dry. Integrates the dry on into the aftertaste and on into the finish.
On the palate, this one sat about a light to medium on the body, surprisingly enough. ABV just seems absolutely low and ends up leading to an exceptionally smooth feel.
Overall, really nice Imperial stout, look at you, Foley Brothers really knocking one outa the park for the style. This one gonna hang nicely with Midwest stouts. Bring it world!

Bottle poured into a snifter showing well filtered honey and no head. The nose shows a lot of sweet caramel malts. The palate is light bodied and well carbonated. Flavors of strong pine resin and a light bitterness.
