750mL bottled December 2021, drunk 9/18/22. Clear blonde-golden with a medium-sized, white head showing moderate-to-low retention. Pretty big lemon and rosemary nose, the lemon being most prominent. Some mineral and light ester/phenol from the yeast underneath, alongside cracker and rustic grain-like malt notes. Clean and with no alcohol, yet I can't get a very good sense of the actual base beer on account of the strong adjunct presence. This must have been brutally overdone when fresh given that it's still so strong and dominant at 9 months old. The taste is enjoyably full of lemon and rosemary with balancing sweet malt and good attenuation. Light-to-medium bodied with soft mineral and light baked bread. The lemon just sticks to the palate and never lets go throughout the course of the glass. It's fruitier than it is acidic, thankfully, but that plus the rosemary equals I'm not even sure what the base beer is. Is this a saison? A belgian golden? A sour? I guess there's light tartness, but even that is obscured, somewhat, by the lemon peel.

Brewery draught, 9/16/22. Clear bronze. Large, well-retained, white head. Spicy and malty with various complex bread and light spicy hop. Honey and mineral but all very light. Soft and succulent with fresh herbs and light pepper. Great attenuation, clean, flavorful, rich yet crisp and drinkable.

Brewery gravity cask with a Lukr faucet, 9/16/22. Clear amber-maize. Medium-sized, white head is big and clumpy, showing moderate retention. Rich breads/cereals and tons of mineral. Spicy, clean, fresh hops. Crisp, bright and and aromatic. Malty and rich with sourdough and herbal hop drying out the finish. Great attenuation and malt depth. Quite bitter/sour finish. Intense stuff!

Brewery Lukr faucet is 9/16/22. Deep golden-,maize, clear, large, creamy, white head, moderately-strong retention. Big, big mineral and herbal hop character. Baked sourdough and well water with honey and herbs lingering. Soft and malty, rich yet attenuated nicely. Sourdough, fresh herbs, strong mineral and lingering bitterness. Quite hoppy, yet there's zero soapy or overly acidic notes. Just intense herbs and balanced bitterness. Good wateriness on the end. Super clean.

Brewery draught, 9/16/22. Clear red raspberry. Small, pinkish head of low retention. Grapeskin, mineral, tannin, hints of raspberry-cranberry-red grape-like acidity. Very soft, understated. Clean and easygoing. Soft, but very spicy with big black pepper. Tannic yet very light, with high attenuation and a very drinkable wateriness. Chalky mineral, juicy acidity. Maybe not 7% abv worth of flavor, but the flavors are interesting, for sure.

Brewery draught, 9/16/22. Clear blonde, small, white head. Nettles, I guess, adding grassy, spicy, floral notes alongside the tastefully done ginger. Low yuzu, as well, with cracker malts and a clean, spicy, ginger-augmented finish. Quenching acidity and woody spice with floral notes and mildly juicy, spicy ginger. Great attenuation, lingering acidity. Clean and interesting. I get nothing like citronella or bug spray.

Brewery draught, 9/16/22. Lightly hazy, bright cherry red with a small, off-white head. Great acidity with big wheat blandness/softness for balance. Juicy cherry, quite tart and bright, rather set apart from the rest of the beer. Lingering cheesey lactic acidity and other funk. No alcohol, flaw, acetic notes. Soft and wheat-forward, very dry, with bright cherry and big acidity of Brett and lacto. No acetic, low sugar, expansive carbonation and moderate juiciness and light vanilla-,like character on the end. Pretty straightforward with excellent cherry expression, and straightforward, mild lactic acid. Super clean, low funk.

375mL bottled 12/30/21, drunk 8/26/22. Slow gusher. Mostly clear, brass-bronze-maize. White head on the edge. Oh boy. Is this American? Because you sure cant tell from the nose. Mega-barnyard with intense sulfur and juicy apricot. Juicy wine in the background with earth and mineral on the end, drying things out (though it's not sweet, so doesnt technically need drying out). Spice from the fortified wine, analogous to bourbon, with a hint of sherry-like oxidation. In short, stellar and hard to find fault with. More pineau than expected, with a soft, slick texture and a mix of acetic and lactic acid. Less funk and mild craziness than actual hard acid, though it's not overly sour. Trying to let it breath, as hopefully this flavor can start to approach that nose. It's definitely mild, interesting, woody, grapey, spicy. A fantastic success, at any rate, and something to drink on a special occasion. Excellently and masterfully blended and aged.

2022, 500mL bottle, drunk 8/21/22. Inky, thick, dark as night. Tan head is thin, showing low retention. Wow that's intense. Vanilla, espresso bean, ash and finally some lighter sherry and bourbon coming through on the very end. It's telling when the sherry and bourbon are the significantly brighter, lighter notes in the nose. Not too much sherry but some light earth, moss, old wine and oxidation, with spicier, livlier bourbon notes to follow. Alcohol isn't hot/sharp but at this level is noticeable upon warming. A pinch of sweetness opens up with light vanilla and warming bourbon spice. Sherry notes through the middle ending on hard espresso and fairly heavy ashen roast. Bitter, well-attenuated and pretty unforgiving. The flavors are all excellent, especially the sherry, though the excessively bitter, dry, Italian roast coffee notes do eventually fatigue the palate. An absolute monster, with a viscous, though not syrupy texture. Fully attenuated; thinking maybe a bit more residual sugar would actually be beneficial here. But well-constructed, albeit a very slow sipper, nonetheless.

375mL bottle drunk 8/20/22. Clear bronze, low head. Juicy fruits with apricot, peach, melon, lactic and heavy brett. Strong sourness with crazy white wine and maple. Vanilla, more grape. Soft, juicy, tart, long lactic notes and vanilla with exotic grape and bacterial notes mixing to crazy notes. Wacky and juicy with incredible fruitiness and other random weird shit. Good attenuation.
