Description

In 2022, we decided to join forces with Siphon Brewing and start a new brewing site in Michelbeke, in the heart of the Flemish Ardennes.

Celebrational beer for the tenth anniversary of Hedonis, only available from 75 cl bottles with hangtag, 1200 of which were made; this is basically Suzanne, Hedonis' saison, aged for an extended period of time on white wine barrels - which, as an idea for an anniversary beer, sounds better to me than many other anniversary beer concepts I have seen in recent years. Quite a violent gusher, so be very careful when opening. Thin, open, unstructured, loose ring of egg-white foam quickly dissolving over a cloudy yolk-yellow blonde robe with ochre tinge. Aroma of clear white grape indeed (more actual grape juice than Chardonnay even), demi-sec, green kiwi, pineapple, unripe orange, whitecurrant, cooked rhubarb, green melon, lemon juice, oak wood, dried lemon thyme, crémant, freshly cut green apple, vague background touch of fresh raw seafood. Very estery onset, thoroughly fruity, sweet with a slight sour edge from the wine but hardly bringing the 'geuze vibes' the brewery apparently raved about; instead, we get a far more 'original' and therefore interesting combo of white grape, whitecurrant, lime and ripe kiwi impressions, superseded by lots of Granny Smith apple. The overall effect is notably cider-like, with vivid carb and vinous mouthfeel through which this apple-ish flavour moves, over a bready core and growing floral hops effectuating a grassy bitter note which in the end begins to fight with the effects of the white wine barrels. Indeed the tannic wood effects, softly tart wine flavours and sweetish-juicy 'grapeyness' do not match with the hop bitter element, but this contrast admittedly keeps things entertaining. In other aspect the wine barrel treatment even dominates the beer a bit, so I guess this keeps things in balance; my girlfriend, being particularly fond of white wine (but also of fine beers), especially liked this one for that reason. The saison base may be a bit lost apart from that persisting hop bitter note, but the end result is indeed a festive beer. One to keep in the cellar for the next ten years and open it in 2036 next to the twentieth-anniversary beer that will no doubt be issued at that time!
