Description
Op 1 februari 2007 openden Bart Devillé en Ann Heremans café ‘Den Herberg’. Aanvankelijk was het echter niet de bedoeling een café uit te baten. Dit idee is langzaamaan ontstaan. We kochten het gebouw in 2000 aan om er een brouwerij in op te starten. Stilaan groeide het idee om er onze ambachtelijk gebrouwen bieren ook zelf te verkopen. Ruimte was er voldoende en mits enige grondige aanpassingswerken was het café nog voor de brouwerij af. Één jaar na de opening van het café was ook de brouwerij klaar voor productie.

Bottle at In 't Spinnekopke. Color: Hazy golden, white head. Aroma: tart, citrus, unripe grapes. Taste: quite tart, Balsamico vinegar, lemon, citrus, unripe grape. Subtle funky. Over medium tart. Just under average carbonation. Nice, but a bit too acidic for me.

Bottle at Villa Servais. Color: Slightly hazy golden, frothy white head. Aroma: Malty, yeasty. Taste: Malty, yeasty notes, fruity hints of yellow fruit. Over moderate sweet, light bitter hoppy backbone. Dry finish.

Bottle at Les Eleveurs Halle. Color: Almost black, beige head. Aroma: Roasted malt, dark malt. Taste: Roasted malt, dark malt, some caramel, hints of liquorice. Medium body, just below average carbonation. Nice.

0.375 l bottle from 'Huis van de Geuze', best before August 2043, probably bottled one year ago. Hazy, orangeish amber with a medium large, frothy, slowly diminishing, white head. Slightly sweetish, sourish, rather funky and quite fruity aroma overripe lemon, leather, oak, horse blanket, gooseberry, apple and white pepper. A little sweetish, quite sour, rather funky and quite fruity taste of overripe lemon, red wine, gooseberry, leather, oak, white pepper, apple, hay, horse blanket and hints of vinegar, followed by a medium long, fairly tart, gently woody-dry finish. Medium body, quite astringent and rather effervescent mouthfeel, average carbonation. Fairly sharp and intense Geuze with a minor but unpleasant vinegary touch. Other than that fairly complex and refreshing, something for a hot summer day.
