Sour, a bit tart, a bit sweet, fruity. Stone fruit, lemony citrus, low acidity, rich in flavor. Excellent.

750mL bottle pour at Hill Farmstead, 8/30/24. Slight haze. Muted brass. Spotty, white head. Seems in very good shape. Wow! It's like all Hill...has the white wine, super mellow lactic and strong mineral of a Hill saison. Very aromatic, with unripe stone fruit and very little barrel, yet obviously that gas helped keep it bright and vibrant over the years. Gentle funk, bright acid and a bit of both oak and very lightly oxidized malt. Great depth with plentiful biscuit, almost a touch of nuttiness and lingering fruitiness. Still vibrant and balanced. Love the mellow but bright acidity.

Bottled. Hazy ambery brown colour with a small off-white head-. Aroma is sweet malts, some rhum, mild caramel, toffee, alcohol as well as some slight ripe fruity elements. Flavour does follow the aroma quite well, but also has some syrupy and mild datelike sweetness.
