Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!

Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.

At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Transparant bubbles, fast reduced to one white circle over hazy yellow-ochre beer. Sourish grapes with wild yeasts, Bretts (the good ones!), farmyard odours, and white wine, lemon. Sourish, grapey; even more expressly white wine, horseblanket. Spring leaves. Ultra dry, tart, not really fully carbonated. Acidthinning and some -burn. Fantastic "Brut" beer, with an outspoken gueuze character. Yet another gem from Jitka!

Tap at BeerGeek Bar. 7,2% ABV. Dry, fully fermented. Medium sourness, med-light tartness, background sweetness or bitterness. Lots of funk, interesting grassy, leafy, vinous, herbal, almost bay leafy character, in addition to classic sweaty horse. Light wood. Great balance of acids, but also of everything. Could use more bubbles and that is about it as far as my criticisms go. Excellent.

2020 vintage, 8,5% ABV declared. Tap at BeerGeek. Pretty dry, light carbo. Med-high sourness, also med-light acetic, more than I like. Also assertive wood though and the shitloads of grapes. It somehow works together, it is intense, but balanced. Good sipper.

Fast gone, cream-coloured head over deep red-brown beer. Old wood, balsamico, utterly out-lagered red fruit, lactic acid. Diary, lactic acid, old wet wood, dried (red) fruit, winecasks. Very dry & tart, bit undercarbonated. Very convincing as an Oud Bruin, just a tad more spritz... Txs to Jitka!

Short lived tinted head over copper, slightly veiled beer. Mild horseblanket, farmyard nose; vinous, winecasks. Sourish, even a bit aggressive compared to the nose; old wood, lactic acid, again some vinous touches (malonic?). Mild carbonation, quite wheatslick, long lasting flavours. Strangely enough (this IS a complex blend), it struck me as an excellent base for further blending. Děkuju, Jitka!

3 yrs. Gushing after all these years!. Dark orange beer, unclear head. Again old sherry, slightly less sweet than the 002. Still sweetish, if with a nice sourish, spritzy carbonation, giving it a lively sparkle. Nuts, sherry Oloroso but going towards fino. Light body, quite slick. Utterly different from Blend 002, but still great in itself. The housemarquee is however apparent. Big txs to Jitka!

2022 bottling, 3yrs. No head, metallic orange beer lookings as liqueur; end of bottle solid deposit. Old casks, vintage wine, wet wood, wind-drenched; bretts. Sweet, old sweet sherry-like, Oloroso, cherries, dry grapes,sultanas. Light, not carbonated any longer, viscous-oily as fortified wine. Unbelievable thing, precious relic. Děkuju, Jitka!

Bottle,cellared for a lot of years in.my own cellar. Had this one before at Wild Festival Groningen (2107?), rated this as best beer of the festival. Curious how it cellared for all those years. Color: Very dark reddish brown, no head. I think it's darker than back in the days. Aroma: Dried red grapes, tartness, oxidation. Taste: Moderate sweet, moderate to over moderate tartness. Sirupy, dried red grapes, Port-like notes and some Balsamico vinegar. Bit boozy. Don't remember the tartness, I think it was mich sweeter back than, with grape-suhar and a much denser concentration of the dried red grapes. No carbonation. Great ageing though. It's still a very nice one. Although I lightly preferred the fresher one, I'm very glad to had the chance to taste this aged one.
