Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!

Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.

At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Bottle. Pours hazy dark ruby with airy off-pinkish head. Dry, intense aroma of sour yeast, with dusty touches and malty hints. Bitter and dry flavour of sour yeast and hops, with sweetish touches of grapes and basement notes. Dusty, bitter, and vinous aftertaste. Lovely.

From tap at Wild Festival Groningen 2019. Aroma is sweetish and tart red fruits, cranberries, cherries, and some grapes. Both tart and sweetish, medium body. More berry than grape in aroma. Fun.

From bottle at Wild Festival Groningen 2019. Syrupy with an aroma of sweet red fruits, brandy, red grapes, and some malt. Sweet and tartish. Not that boozy despite the 10%, but a bit warming and full-bodied, with a sticky mouthfeel. Drinks a bit like a Mead.

Bottle from BiervanEijk, Frederiksoord. Aroma is intense red grape and tart red fruits with redcurrant, some wild yeast. Medium sour flavour with a mildly dry finish. Medium body. Vinous with a deep red fruit aroma. Delicious.

Bottle from Pivni Rozmanitost @ Home. Pours slighlty hazy golden with a white head. Aroma of light sourness, light malt, yeast, wood, tart fruit, grapes. Flavor is light sour, little malt, yeast, light wood, white wine, grapes. Medium body, average carbonation, dry and light acidic finish. Nice drinbkability. 030125

2020 vintage. Dark red body, with a big, creamy, beige head. Aroma of red wine, dark grapes, ripe dark fruits, slight tannins. Tastes similar, with more leathery, tannic notes. Medium mouthfeel, with an average carbonation. Finishes vinous, tannic, very fruity. Lovely stuff, with lots of beautiful red wine notes. Drinks very elegant, especially the taste has a lot of depth. Score: 8 / 4 / 9 / 4 / 16

750ml bottle. Opalescent, yellow-ish, golden colour with small, frothy, fading, white head. Funky and fruity aroma, notes of rhubarb, some mustard seed. Taste is mildly tart, tangy, funky and fruity, hints of rhubarb, mustard seed. Watery texture, minimally astringent palate, fine, dense, soft, mildly prickly carbonation. Mild and balanced, focussed, reductionist in a way - good.

Tiefgoldgelb bis hellbernsteinfarben und glänzend trüb mit feiner Perlage. Die feinporige, gebrochen weiße, Schaumkrone ist dabei mäßig haltbar. In der Nase vernimmt man eine komplese Fruchtigkeit mit Noten von Stachelbeere, grüne Traube, Verjus, Holzfass zusammen mit einem sehr feinen, kräftigen Wildhefecharakter. Der Antrunk kommt frisch, spritzig, saftig-fruchtig bis fruchtig-säuerlich und leicht beerig. Es präsentiert sich ein Körper mit guter Fülle, fein moussierender Rezenz, samtiger Textur und guter Trockenheit. Auf Gaumen und Zunge zeigen sich frisch-fruchtige Noten von Stachelbeere, grüner Traube und grünem/frühreifem Steinobst. Es zeigen sich generell eine komplexe Säurestruktur, zarte Herbe und ein angenehmer Wildhefe- bzw. leichter Brett-Charakter. Letztendlich hat man ein tolles, vielschichtiges und überaus angenehmes Gesamtbild vor sich. Trotz der Komplexität wirkt dieses Bier nicht überladen und weist eine sehr gute Drinkability auf. Der Nachtrunk gestaltet sich langlebig mit einer fruchtig-säuerlichen Basis und aufkommender Herbe der Wildhefe.
Fazit: Einfach top! Das ist High Quality Fine Beer!

Tap at OP, 6,2% ABV. Thin body, med-light carbonation. Med-high sourness, too much of it composed by acetic acid, not really delicate. Medium acetic, light everything else. Light leftover sweetness, light tartness. Overwhelmingly acetic though and I am tired of shit beers like this commanding premium price just because someone took the time to let them go to shit. If Cantillon made beers like this, they would be out of business in a year or two. Not a terrible beer, but not good either, out of balance and that is even including the moderate plum presence, which should make it a bit more smooth, alas not enough. Fuck this.
