Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!

Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.

At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

0.75l bottle, at the cool kids table (thx!). Huh, didn't note that the others were merged, but this one seemed different enough from 2021 we'd had the same day, so... Clear red-amber body, without head when I got to it. Huge, fruity aroma, big sour cherry, light funk. The enormous sour cherry note persist in the taste, lightly rubbery, yeasty, phenolic, but overall quite pleasant. Good one!

2019 but 8% 0.75l bottle shared at the Wild Beer Day 2024. It's really confusing even for Wild Creatures standards what's 6.3%, what's 8%, if there actually were bottles at 6.3%... This one was 2019 vintage bottled in 2022, so the versions are likely the same - but then where did the initial 6.3% come from... Anyway.... Murky dark orange-golden body, off-white head. Oaky, soft aroma, floral, pleasant citric and wild/bretty notes, light acidity. Soft taste, floral, oaky, lightly citric, nice, simple, soft, without acidity. Quite classy, lovely even!

Tap at Wild Beer Day 2024, thx to the people at the table! Hazy golden-yellow body, off-white head. Bretty aroma, herbal, quite classy, elegant, lean, but somewhat floral. Lean, dry, flat taste, bretty, herbal, bit floral, bit roughly phenolic around the finish, astringent maybe, though overall quite nice.

Draught at Myslíš? Small creamy head,muddy oxidised orange colour, glue, wet wood, lacto, almond, malt vinegar, mellow sourness a bit of fruity sweetness. Nice and really interesting, highly enjoyable.

7.2% Golden colour with thin head. Aroma is grainy and quite fruity with woody funk. Very full. Tart fruit skins. Vinous. Dry woody finish

Optisch zeigt sich leicht opaltrübes Orangerot und der zarte Schaum verschwindet erwartungsgemäß rasch. Die Duftaromatik wirkt sehr fruchtig mit schönen Noten von unreifen Beeren und leicht trocken-herben Wildhefenoten. Der Antrunk kommt feinprickelnd und fruchtig-säuerlich-herb. Ein sehr erfrischendes, spritziges und leicht trocken wirkendes Mundgefühl mit einem fruchtig-schlanken Körper weiß sofort zu überzeugen. Aromatisch zeigt sich eine sehr angenehme Säure mit einem fruchtigen, durchaus vielschichtigen Beerencharakter und einer ebenso angenehmen, leichten Wildhefearomatik. Der Nachtrunk gestaltet sich säuerlich-herb fruchtig mit einer leichten Bittere am Ende. Mein Fazit: Sehr natürlich und absolut erfrischend! Erinnert ein wenig an Orange Wine. Ich bin begeistert!

Just a rim over veiled deepn-red beer, still. Raspberries², very intense, both vinous & perfumey, aromatic. Sour, but the acids are pure fruit. Raspberry, some sour cherry. Finish has aged (fruit)wine characteristics, deep and balanced. The sour cherries come out more in the end, whilst the raspberries from the beginning get rosepetals-like flavours. Palate goes on and on, past the obvious fruit. Another tour-de-force ...

No head whatsoever; fully hazy brown beer. Brandy nose, oxydation, chocolate, raisins or plums on spirit, nut- and brandycake, ripe banana. Sweet, raisins, sultanas. True as claimed on the bottle, Tokaj isn't far away. Again (milk)chocolate, brandy, dessertwine, boerejongens . Incense, red eating grapes, very ripe pears, sacramental wine. Oily, alcoholheat and -slickness. Undercarbonated - not that it disturbs. Remarkable hybrid, utterly unlike anything else tried so far from Wild Creatures. Genius, respect!

Bottle @ Blåvand, trade by Rotin and Ascelja, huge thanks. 2020 vintage. Pours hazy orange with a small offwhite head. Aroma of light sourness, light malt, yeast, tart fruit, red berries, rich raspberry, oak. Flavor is light sweet, quite sour, little malt, yeast, rich tart fruity berries, oak. Medium body, average carbonation, dry and rather acidic finish. 100224

Bottle from Erlings Jazz Bar @ Home. Heavy gusher (more like a small explosion) that pours murky burnt orange with a small offwhite head. Aroma of light sourness, little malt, yeast, tart fruit, rich apricot. Flavor is light sweet, light sour, little malt, yeast, rich tart fruit, rich apricot, light vinegar. Medium body, average carbonation, dry and acidic finish. Shame half the bottle ended all over the place :( 080224
