Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!
Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.
At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Draught@Roudaribaari Ihme, Helsinki. Hazy orangeish golden colour with a mediumsized white foamy head. Aroma is citrus, some elderflower, mild tart berries and some earthy elements. Flavour is citrus, some elderflower, earth, berries and some tart wooden tones tones with slight vanillaish elements too.

(Draught at Stockholm Beer & Whisky Festival, 8 Sep 2023) Golden colour with frothy, white head. Fruity, sourish nose with notes of green grapes, citrus, oak wood and yeast. Fruity, tart taste with citrus, grapes, white wine, a touch of vinegar, oak wood, yeast and a winey finish with low bitterness (if any). Almost full body, quite dry. Lots of wood and white wine. Quite complex. Very nice.

Optisch wunderschön orange-golden bis bernsteinfarben und leicht trüb. Obenauf findet sich relativ wenig weißer Schaum. Die Duftaromatik überzeugt mit fruchtig-floralen Noten, denen leicht animalische Anklänge der wilden Hefen beiwohnen. Der Antrunk kommt spritzig und sehr angenehm fruchtig-säuerlich. Am Gaumen entfalten die fruchtig-säuerlichen Aromen schöne Noten von Orange, Pfirsich, Marille, Trauben und selbstverständlich tollen Noten der wilden Hefe. Ein gewisser weiniger Eindruck lässt sich dabei nicht verleugnen und das Ergebnis ist ein rundes und überaus harmonisches Gesamtbild. Das weichspritzige Mundgefühl hat auch eine sehr angenehme Drinkability zur Folge. Richtig toll, was die wilden Hefen hier vollbringen. Mit den verarbeiteten Traubensorgen (Weißburgunder und Solaris) wurde meines Erachtens auch eine hervorragende Auswahl getroffen. Im Nachtrunk zeigt sich dieses Bier weiterhin säuerlich, fruchtig und super erfrischend. Mein Fazit: Was die Belgier können, kann Jitka mit ihren Wild Creatures auch! Großer Respekt!

Bottle 0.75l, vintage 2019. Almost clear, deep gold colored. AROMA- fruity, some berries, peach and apricot, funky, leather. FLAVOR- smooth, lightly sweet, moderately sour and tart, nice fruitiness again - strawberry, apricot, cherry compote, leather, sea buckthorn. No clearly recognizable rhubarb. Medium bodied. Simply great.

Bottle. Amber-bronze color, almost clear, weak foam. Aroma: sweet, raisins, caramel, dried fruits, figs and dates, a little port wine. Taste: sweetish with sourness, raisins, figs, dates, port wine, warms, good wine.

Bottled at Drinkoteka at the Hop Hooligans tap takeover, courtesy of someone with taste. Clear coppery body, no head. Caramel and huge raisins in the big, sweet aroma. Lean, dry taste, raisins, white grapes, creamy, sweet, oily, lightly metallic, lovely in a way, but not a shade on 2016, at least this bottle wasn't.

Bottled, huge thanks Lukáš for sharing these with us! Murky red-brown body. Raisins, funk, some tartness. Lean, dry, but creamy, woody grape-driven taste, sweetish and sour, smooth and pleasant. Well balanced, simply works!

Bottled at the Raven Pub I reckon. Hazy golden-amber body. Funky, tart, oaky, bretty aroma. Sweetish-sourish taste, oak, herbal-bretty touches, okay balance between the body and the tartness. Pleasant enough, though I didn't dig the body - might not have had it at the right time. To rerate if I can.
