Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!
Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.
At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Tap at Dno Pytle at the Raven TTO. Deep burgundy pour, an off-white head. Nose is big funk, barnyard, some woody notes and refreshing cherries. Taste is lightly boozy sweetness and funk upfront, with a touch of wood, and then there’s a light sourness and tart fruity notes, a pleasant spicyness to it as well. Closes with a long lasting fruity and funky finish, has medium to full body and soft carbonation. Tasty.

Bottle from Lya. Pours murky orangeish copper with thicc head. Nose is messy funk and light fruits first, but with time it actually gets much much smoother and refined, the fruity touch is highlighted better and in a more elegant way, and the funk becomes less offensive. Taste is big funk, barnyard and acetic acid (which also becomes more restrained with time) with a big fruit punch. It’s not that classic refreshing sweet kinda fruit tho, but fits the beer nicely. Closes with low to moderately sour finish, has light to medium body and average to high carbonation. Noice.

Bottle. Pours copper colour with huge off-white head. Nose is vivid and complex notes of fruits, acid, faint booze, and wood. Taste is extremely sour, but as sourness soothes there appears some fruits and woody notes as well tha give nice layers to it. Closes with long lasting _very_ sour finish, but it also becomes pretty pleasant as it fades.Light bodied with high carbonation. Interesting and pleasant beer, but borderline too sour for me.

Bottle shared at Craft Beer Spot. Dark copper pour, off-white head. Nose is lovely, somwhat tart, slightly funky grapes with a touch of sweetness. Tastewise it's similar but not as good, it's grapes again but this time it's less sophisticated and a bit one dimensional, but still pretty tasty. Slightly tart, funky, just a tiny bit sweet. Light body, average to high carbonation.

2016 vintage bottle shared at Craft Beer Spot. Pours dark copper with a thin, off-white head. Nose is... damn. It's raisins, nuts, dark malts, brandy, low chocolate-like sweet notes, like the best barley wines out there. Super complex, well layered, just lovely. Tastewise it's just a bit less exciting, it shows funky, somewhat sweetish and tart grapes, dried fruits, a woody touch, some boozy sweetness. Medium to heavy bodied with soft carbonation, an amazing dessert beer.

Tap at Salon Piva, courtesy of the brewer. It’s a decent apricot wild, but let’s face it, apricot always works in beer so that’s not that big of an achievement. It’s also fairly acidic and funky with earthy, leathery notes. It’s alright but I’m used to much more from WC tbh.

Bottle 0.75l, more than four years aged. Hazy, reddish colored. AROMA- funky, a bit sharp, sour dark grapes, fermented red currant. FLAVOR- slightly sweet but quite sour, tart, very fruity - sour cherry, red and black currant, dark grapes, quite funky, wooden barrel. Fuller, syrupy body.
Quite lots of currant peaces on top and at the bottom of bottle which was somewhat unpleasant for tasting such expensive beer. Well, it was great anyway.

On tap @ XII Edizione di Cheese in Bra. All'olfatto si esprimono sentori di sour. L'olfatto viene stimolato in maniera elevata e il modo in cui permane è apprezzabile. Il manto birroso superiore resiste abbastanza. La grandezza delle bollicine è a grana fine. Il liquido si presenta limpido. Il colore è quello dell'amarena. Il corpo è rotondo. L'amaro è contenuto. L'acidità è pesante. La forza gustativa è elevata e si prolunga in modo sufficiente. Il finale è brusco. Il retrogusto è di decente intensità. L'aroma in bocca porta i segni di ciliegia, vino Porto e acetico.
