Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!
Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.
At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Bottle pour at Lya, Prague. Deep ruby with almost no head. Sour cherries, juicy, quite acetic, somewhat short finish. Medium bodied.

Bottle at Wodan tasting. Yellowish color, small white head. Smell and taste are lightly sourish, tart-ish, rhubarb quite clearly imo. Not bad.

Dark brownish red, no head to speak of but good carbonation. Smells oaky and grapey, not terrible sour. Taste is quite puckering, with a nice yet vague sweetness from the fruit. Pretty dry, loads of oak, nice amount of grape. Pretty good, refreshing!

750ml bottle. Hazy, dark orangey, red colour with average, frothy, fading, pink-ish, off-white head. Fruity and tangy, mildly funky aroma, notes of raspberry, some lemon, lemon peel, fruit acid. Taste is tart-ish fruity, tangy, mildly funky, minimally sweet, notes of raspberry, lemon, lemon peel. Watery texture, smooth and soft, minimally astringent palate, medium, prickly carbonation. Well balanced, mild - very nice.

750ml bottle. Hazy, reddish, brown-ish, purple colour with small to average, frothy, half-way lasting, minimally lacing, dirty, pink-ish, off-white head. Sweet-ish, fruity, oaky and mildly funky aroma, notes of red and dark berries, blue grapes, a touch of grape sugar, spicy hints of cinnamon, a touch of vanilla, whiffs of lactic acid, sauerkraut, sage. Taste is tart, fruity, mildly funky, dry woody, notes of redcurrant, blackcurrant, corresponding kernels, parings, fruit acid, whiffs of lactic acid, sauerkraut, sage, lemon peel, a dry, woody, oaky touch. Slightly creamy, watery and acid thinned texture, slightly dry, minimally astringent palate, medium, foamy, mildy prickly carbonation. Wonderful composition, superbly balanced, full of subtleties - excellent!

Bottle @ Home. Trade by. Rotin and Ascelja. Pours clear dark red with a fading light pink head. Aroma of malt, light sourness, yeast, barnyard, funk, little wood, tart and light sweet cherries, cherry stones. Flavor is lightly sour, rather dry, funk, wood, cherries, little alcohol. Medium body, very High carbonation, dry light acidic finish. 220521
