Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!
Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.
At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Bottle, label says 5.2% ABV. Amber with a cm of near white head that lasts rather well. Horsey aroma with some berries, oaked red wine. Sour and acidic with fruit and slightly zingy oak. No great finish but tasty and pretty involving.

Bottle at Beerdock, 1.11.2020. Moderate sourness, ample acetic character, rather light fruity+lacto (as far as sourness goes). Med-light raspberry character. Everything else more or less in the background. Rather thin body, moderate carbonation. Good one, though too acetic, feels a bit off balance. 3,6. Rerate bottle at a WC tasting at Zil verne, 2.9.2021. Thin body, high carbonation. Lots of raspberry, very natural fruit character. Med-high sourness, also moderate tartness, med-light sweetness. Only a touch of acetic, but mostly pleasant fruity taste. Very tasty, refreshing, better than last time.

Tap at Pivo & Burger 5. Murky dark ochre body, slightly off white head. Light, funky aroma, white grapes, light citric touches, tart. Funky taste, white grapes again, sweetish, light and dry. Quite okay really, but not a festival beer.

Pivo & Burger 5 Karlín. Hazy ruby body, pinkish head - thick and lasting. Funky grape-driven aroma, red grapes, peppery, with a significant touch of glue. Again, the Cabernet Moravia (Zweigelt x Cabernet Franc) dominates the taste, with a strong dab of glue and funk. Sweetish, lean, tart... Nice but not wow. Might need to be retried in an environment that's not a festival...

Bottle. Lovely deep clear red with a brief pink head. Brooding wild aroma of red grapes, blackcurrants, apricots and their stones. Fairly light bodied. Not really slippery. Lowish carbonation is perfect for me. Dryish with moderate sourness and some red wine vinegar (not enough to be a negative for me). Woody, stemmy, skinny - Wonder what's Brett and what's grape skin? Not sure it's very lambic-like but it's good as its own thing.

Tap at Salon Piva Summer 2020. Sour cherry aroma and taste, wooden barrel notes, medium sour. Medium to full body, fruity and wooden sour and light bitter finish. Good.
