Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!
Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.
At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Bottle 0.33l from our archive, three years aged. Cloudy, amber colored. AROMA- apricot, a bit vinous, sweet to flowery, slightly sharp sour tones. FLAVOR- slightly sweet, moderately sour and tart, sour tones, apricot, flowery. Fuller bodied. Great.

Bottle, 750 ml shared with Max, Miro and Tomislav. Hazy purple with medium pink head. Dark and red berries, some barrel, juicy, bit on the sweet side, medium to heavy sourness. Medium carbonation. Medium bodied.

Bottle from Mitra Zuiderpoort Wijchen. Thanks, Ewout! Gusher. Color: Lightly hazy reddish brown, very thin off-white head. Aroma: Dried red grapes, bit boozy. Taste: Medium to over medium sweet, intense fruity dried red grapes. Raisins, oak wood, tannins. Dry-ish mouthfeel. Below average carbonation, more than 2016 version which had no carbonation. Bit boozy and Port-like. Very light vinuous sourness. Over medium body. You can taste the dense concentration of the dried red grapes. Sirupy. Sticky. Grape-sugar. Great slow sipper.

Bottled. Dark red body, pinkish head. Big tart berry aroma, it seemed slightly more like cherry, fairly simple. The taste, however, is where it shines even more, dry notes, berry dominates, rhubarb, orange peel, oaky notes, all over the place in a good way, clean, all in all definitely a winner by Wild Creatures.

Bottled. Hazy red body, whiteish head. Tart raspberry aroma, fairly clean for what it is, trace barrel. The raspberry is dominating in the taste as well, lightly tart, some acidity and the classic Wild Cleature touch that I kinda identify as glue. Quite nice, okay.

Bottle. Color: Hazy orange amber, white head. Aroma: Funky, bit fruity, somewhat sweet and tart at the same time. A bit metallic(?) Not that much going on in the aroma, I expected more. Edit: Getting better, far more fruity and no more metallic after standing longer. Taste: Barnyard funk, sweetish and moderate tart fruity stonefruit (peach, apricot) combined with also fruity medium sour vinegar-like rhubarb notes. Some wood in the background. Medium body, average carbonation. Quite a lot of carbonation for this kind of beer. Getting better after standing some time. Also better balance after some time standing. Long lasting tart, fruity and bit funky finish. Nice Sour, enjoying it on the terrace in the garden on one of the first warm days of 2021.

2018 Ed Bottle claims only 4.8% ABV! Pale(r) pink head, medium, rather stable over deep, deep burgundy beer. Sour cherries², intense berries nose, lactic acid; bit sulphury, farmyard odour, putteke , horseblanket. Very sharp, but indeed fully real sour cherries, again very intense. Some acetic acid, lactic acid, fruitacids, broken down fruitsugars. Acidburn, -thinning, and texture as both from fruitjuice and fruitskin. Breathtakingly superb!

2020 Ed. Head gone in seconds, hazy orange-ochre-golden beer. Leather, malts, wild yeasts, sulphur. Sweet-sour, in the mouth the grapes are present with some acidity and more fruitsweetness. There's however a strange, fleeting hint of chlorine (sterilization?). Lactic acid, some acetic acid and fruitacids, lemon. Acidthinning, yet very slick - grapeskins? Not very carbonated, lipsmacking acidity. Yet a totally different product from this brewery, original. Thanks to Stef!
