Description
Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!

Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.

At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Bottle from ZIl Verne. Deep ruby color with medium pinkish head. Clear aroma of sour cherries, wood, tannins, barnyard, funk. Acetone by warming. Taste, starts cherriesh sweet, quickly followed by acidic sourness, tart tannins, light caramel, barnyard. Long sour cherries finish.

Big bottle day, long-lasting gusher, reddish coloured, contains lots of murky floaties, looks, gentle sourness, dry, wood, red fruits, light, subtle, moah..

Towering pale flamingo head, slowly pitting in over opaque deep-red beer. Rainwater, red fruit, redcurrant, vinous, Noorderkrieken. Vinous, but short flash of chlorine, then red grapes and red wine. Mild acidburn and -thinning: good carbonation, long lasting red fruit and grape flavours. Another gem, Jitka!

2018 Ed. Fluffy white head over clouded orange beer. Rainwater, horseblanket, lemon, sulphur, fruity esters, mouldy citruspeel, putteke . Lactic acid, Brettanomyces, lemon, lemonpeel. Unripe peach, yoghurt. Preserved Turkish lemon with all the sugar and honey washed off. Light body, very well carbonated, lipsmacking acidity, acidthinning. The closest Wild Creatures comes to gueuze. Blending would complete the trick, I guess.

Bottle at Raven. Murky dark orange body, off-white head. Creamy peachy aroma, light lactic notes and funky, wild yeast notes. Lean taste, leathery, peachy, bitter, dry, slightly astringent. Not the best Wild Creatures, but still highly respectable, as all of their beers usually are!

Pale pink head, fed by big-bubbled veiled red beer and slowly dissipating. End of bottle solid yeast. Fresh red fruit, raspberry, red grapes, incense and a vinous finish. Sweetish-sour, fruitacids, vinous. Hints at 'soft' wood (as cherrywood f.i.). Bit of lemon, raspberry again, blossoms. Medium bodied, quite (fruit)slick; feels better carbonated than it looks. Acidthinning. Again an extremely good grape ale from Jitka!

Pink head over faintly veiled carmosine to cardinal red beer. Sour cherries jumping out of the glass; fruitesters, lactic acid and even a tad acetic. Hints of moss, bark, cherryskins, red wine. Cherries² - both sweet and sour. Vinous, with a sweeter cherryconcentrate finish. Medium bodied, better carbonated than it looks. Dry-out effect. Another - albeit slighter sweeter - gem from Jitka. The fanal - fatale wordplay is well searched for, but I'm afraid it doesn't sound that kosher in French...

Świetne piwo, w nosie figi, przemrożone przejrzałe ciemne winogrona, delikatna nuta drewniano-pestkowa, w smaku słodko, winnie, delikatna pestkowa cierpkość na finiszu, sporo ciała, mało kwasowości i genialnie ukryty alkohol. Dawno nie piłem tak dobrego piwa fermentacji spontanicznej.

Bottle, 750 ml, shared with Max, Miro B, Zec and Tomi. Cloudy golden white head. Fruity, peach, grapes, medium sourness, tad acetic. Medium bodied.
