Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!
Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.
At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

At BXL. Hazy golden. Huge fresh oak, vanilla, floral, soft funk, citrus. Just medium sour. Quite unusual, not sure if I really like it a lot but it’s nice to try.

Taster at BXLBeerfest. Orange murky color, small white head. smells wood, funky, parfumy, stone fruits, tangerines. Lovely smell. Full body, soft carbonation. tastes grassy, earthy, citric, peppery, wood, light boozy,herbal, juniper. Finishes dry and light to medium sour with notes of juniper, earthy and peppery notes.nice to very nice one overall

27.08.2022: Taster at BXLBeerfest. Orange very hazy color, small white head. smells parfumy, earthy, tobacco, citric. Nice smell. Full body, soft carbonation. tastes citric, grassy, earthy, peppery, herbal, Saison yeast. Finishes dry and light to medium sour with notes of Saison yeast, pepper and grassy notes.very nice one, love the balance, do not get any rhubarb though

BB 01.07.2031. amber clear color, small white head. smells bit oxidized, sherry, nutty, walnuts, tobacco, earthy, light hay, light volatile acids. nice smell overall. full body. soft carbonation. tastes nutty, peppery, tobacco, some volatile acids, balsamico, earthy. finishes dry and light to medium sour with notes of balsamico, walnuts and tobacco notes. taste wise trending towards a sour brown ale. Not the biggest fan of the balsamic notes. Overall good.

Bottle. Unclear orange golden body under a fine, dense head. Very nice aroma, classic funky geuze with malt, citric fruit, wood, vinegar and mild wood, a bit vinous. Taste is really smooth and nice with distinct funk, rather mild acidity, wood, slightly spicy. Not really much rhubarb detected here, more like peach, apricot etc. Fine balanced body and nice balance all over with aroma and taste. Could easily go for a geuze from any classic Belgium brewery. Well made, looking forward to try more from this brewery.

375mL bottle at Bad Flash Karlin, pours a deep dark mahogany with a tiny head. Nose has plenty of balsamic, sweet brandy, and sweet red grapes. Flavour is unusually sweet for a mixed fermentation sour, with sweet red grapes, light brandy, buried wild yeast, and a touch of balsamic. The sourness is eclipsed by the sweetness, but it works — drinks more like a brandy or port wine hybrid, with only the subtlest of wild yeast. Very good.

Brownish dark red, light pinkish foam, but very unstable. Smells like loads of sour cherries. Highly carbed, fairly puckering sourness, light. Taste is sour, some vinegar, but mostly lots of sour cherries. Bit too sharp and carbed for me, but tasty too!

On tap at Cardinal, Stavanger. Deep red colour, small pink head. Aroma and flavour of redcurrants and blackcurrants, not very sweet nor very sour, with some spicy and herbal overtones.
