Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!
Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.
At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Bottle from BaseCamp. Shared with Hrabren and Ogivlado. Cola brown body, Pelinkovac-like. Huge, atypical, sweet plum jam, grape jam, creamy, oxidation, hmmm... The taste, however, remains surprisingly similar, big plum/grape jam, solid tart finish, very much balanced, some barrel, cork pushes through but stays well integrated. This is some serious, excellent stuff. Pretty much a top class dessert beer, even though the aroma lets it down.

Bottle sample at a tasting at Max's place. Thanks Max. Brown. Oxidation, dark fruit jam, chocolate, honey, sweet and sourish, jammy, rounded. Good and interesting.

330ml bottle. Clear, darkest ruby red colour, no head. Vinous, fruity aroma, notes of blue grapes, cherry, recurrant, some plum, hints of Sherry, Marsala, very mild, funky yeasty overtones. Taste is sweet, vinous fruity, slightly tart, notes of blue grapes, cherry, Marsala, Sherry, hints of redcurrant, some plum, some fruit acid. Viscous texture, smooth and soft palate, soft carbonation. Very tasty, very harmonious - excellent!

# 1083; 6/2018. Méně výrazný kriek, výrazně kyselý, viňový. Oproti belgickým klasikám tohoto stylu o něco méně komplexní. Celkově ale velmi dobré pivo.

Bottle 0.33l from our archive, one and half year aged. Cloudy, reddish colored. AROMA- red wine, grapes, red fruit jam or syrup, wild tones, leather. FLAVOR- slightly sweet, lightly sour, sharp, the same as aroma. Full bodied. Very good.

330ml bottle. Wonderful, clear, purple-ish, ruby colour with small, frothy, fading, off-white to beige head. Vinous fruity aroma, notes of cherry, blue grapes, morello. Taste is dry, tart, vinous fruity, minimally woody and tangy, notes of cherry, morello, blue grapes, some citric acid, a touch of old lemon peel, nutmeg and cinnamon overtones; sour, fruit acidic finish. Watery-oily texture, minimally astringent palate, prickly carbonation. Very nice.

330ml bottle. Minimally milky, pale reddish, amber colour with small to average, thick, frothy to creamy, moderately lasting, minimally lacing, white head. Vinous fruity, woody and slightly tangy aroma, notes of oak, white grapes, mild vinegar, some white pepper, old lemon peel. Taste is tart, vinous fruity, slightly tangy, some fruit acid, citric acid, vinegar, notes of white grapes, old lemon peel, gooseberry, dry, minimally tannic notes of oak, some apple, other orchard fruit. Very well balanced, mild but not boring, wild but not overdone. Surprisingly good for such a juvenile brewery.
