Draft pour at The Collective. Oily amber copper pour with a moderate foam head and lace. Spicy malt forward aroma. Flavor is a nutty malt with a cool finish. Not a whole lot more than that. Basic amber for me, but good all around. Enjoyed this.

Draft pour to a snifter at Postdoc. Reddish copper pour with a fizz ring head. Malt, caramel, and almost in like aroma. Flavor is cool, semi sweet. Cool, but has a warming feel. Soft malt finish, and a bit empty. Glad they put this in a barrel as well. It added, but this version is still good.

Draft 12 oz pour at Postdoc for their anniversary. It’s only been a year? Crazy. Pours a clear golden color with a rocky foam head. Sour fruit and straw aroma. Flavor is a lot more sour up front than the regular version, which makes it better instantly. Slight straw background, with a cool and sour wheat finish. Surprised at the difference here the pineapple makes, without the pineapple being a dominant flavor. Overall an excellent beer here.

Draft 12 oz pour at the Postdoc 1 year anniversary. Dark ruby pour with a swirl foam head. Aroma of fresh red apples, that surprised me. Flavor has a similar apple fruitiness throughout, with hidden malts, grape, and some berry. Not at all what I was expecting. A little booziness here, but not too off putting. Unique for sure. Tasty stuff.

Draft pour pint at the Postdoc anniversary party. I don’t like hazelnut at all, but I love coffee and beer. 2 beats 1. Listed as Postdoc Cram Session - Hazelnut. Jet black pour with a tan bubble head. Coffee grounds aroma. Flavor is very little hazelnut, thankfully. Coffee dominant with a dusty finish. Drinks nice. Tagging this as another solid morning beer.

Draft pour pint at Postdoc. Light clear golden pour with a lasting fizz head. Corn dominant aroma. Grainy, less than clean. Corn linger. It is what it is I suppose. Average blonde. Eh, average golden. UPDATE: a lot more mellow, less corny, more refreshing. Improvement, though still on the plain side. Although, a blonde that isn’t plain? Love to try it.

Someone beat me at the buzzer with adding this beer, and did a better job doing so anyway. That’s okay, I’m better at drinking beer than I am adding them to a database. Data entry has never been on my resume, but neither is beer drinking. It should be. Employers dig that quality in a candidate. Draft 12 oz pour at Postdoc. 2016 vintage! A bunch of people are here to take a tour of the brewery. I’m just sitting here drinking a beer and looking through the window towards the tour and narrating it myself. If you are reading this, it’s because I want you to know everything. My incoherent rambling on this site is surly going to be the source of my entertainment when my days are short. I know one thing, I’ll still be drinking beers like this one. If I’m not, then something very terrible has happened. This is probably the darkest beer I have ever seen. As dark as the living room in the middle of the night when you are waving your hand around like a shitty magician looking for the light switch. Aroma brings out hints of whiskey, chocolate, vanilla, and dough. Flavor is robust, rough up front, but smooths out. Like a good whiskey for me. I was looking forward to trying the regular side by side with this, but the regular conveniently disappeared upon the barrel aged release. The beer has a chocolatey, bourbon like coating mouthful finish, that is consistent with some of the greats in its style. Demon star imperial stout does sound quite familiar though. They asked. They said yes. I would have drank this beer if it had a far less intimidating name. This beer was great, and I rambled on for this long, because I feel like a beer like this deserves a long, detailed rating of how great it is. Though I know a good beer when I have one, putting on paper is much more difficult. So this length is partially a decoy. I loved the beer.

Draft pour pint at Postdoc. Pours a clear copper color with a foam film head and lacing. Hop forward aroma. Flavor is hints of orange, hop heavy, and a dry finish. Bold hop linger late. Decent beer here, but less a standout.

Draft pour to a snifter at the brewery. Pale golden yellow pour with a thin bubble ring head. Sour, slightly salt water aroma. Flavor heavy with lemon and other citrus. Dry, light finish. Quite tasty. Update: enjoyed a new batch at Postdoc, over a year later. This has really improved. Love the brett impressions here. Gentle tart. Really liked this.

Draft 8 oz pour at the brewery, a day after the release. Near black pour with a big bubble head. Hinted espresso and dark fruit aroma. Dark fruit flavor, some chocolate, and a subtle sweetness. Soft burn finish. Very nicely done.
