Smooth milk chocolately and caramel malty brew. Malt profile is spot on. Dangerously drinkable for 7%. Perhaps a bit fuller bodied would have helped. The commericial description is pretty spot on. This is what I want to drink next to a fire reading a good book.

Ok, realize the reciept changes year to year. I may have missed a year, but IMO, 2008 is by far the best of the DIPA. Excellent backbone, but unlike past year the hops really shine through on this puppy. Pine and citrus. Pure west coast. Finishing in your face bitter. Only sampled from bottle, but it was damn good. Rating is only for 2008. Other years would be lower.

Draught at Craft Beer Bar. Copper/orange in color with a light tan head. Aroma is nice and hoppy. Citrus, grapefruit, orange with a good caramel malt background. Body is right on for a DIPA. Intense hop flavor, possibly the hoppiest Japanese brew I’ve had. Citric, some pine, grapefruit, light sweet malts and a bit of earth. Finish is very bitter and lasting. The malty background balances out the hop blast very well. One of the better DIPAs I’ve had, and quite possibly the best Japanese DIPA. Would love to see this in bottles.

Bottled; 2007 version. Caramel orange in color with a firm, off-white head. Aroma is sweet and spicy. Caramel apples, fruits, chocolate, cinnamon, nutmeg, and milky. The body on this one is near perfect for the flavor. Sweet malts, caramel, cinnamon, and some milk chocolate. Finish is a little salty, with nutmeg and light citrus tones. Excellent. (The 2008 version loses some points. Much less exciting with less pronounced spicing. Still good, but in the 3.6 range. Rating is still for the 2007 version)

2007 version, bottle. Caramel in color and the vigorous pour resulted in no head. Pleasant aroma. Caramel malts, strawberries, brown sugar, fruits, and alcohol. Silky smooth body. Sweet malts, caramel, fruity, pear, strawberry, a touch of honey and alcohol. I was tempted to bump up the flavor’s score until the finish kicked in. Ends with intense rubbing alcohol. Besides the hot finish this is a nice beer that I’d have again.

Deep red with a large off-white head. Spice, yeast, fruity, sweet malts, berries, and a little light tart cherry. Full, fairly carbonted body. Flavor is pretty intense. Sweet malts, spice, yeast, berries, molasses and alcohol. As it warms chocolate becomes much more noticeable. Finishes a little bitter and some alcohol warmth. A real nice belgian.

Came across more as a black and tan than anything else. Smooth malty body, very lagerish. Some lingering cappuccino notes at the end. Oddly tasted better in a bottle than on tap, which is a first.

This is truely a winter warmer. A ruby red beauty that shows notes of milk chocolate, candy sugar, strawberries and cherries. Alcohol may be too aggressive for some people’s liking, but I thought it was appropriate given that if I was in a snow storm I would want something to warm me up. Impressive beer in part due to the fact that the strawberries really come out.

Cola in color with a full, medium sized, tan head. Caramel malts, toasted malts, some cocoa, vanilla, and a bit of dark fruits. Mouth is a bit thin. Flavor is very similar to the aroma, with the toasted coming through a bit stronger. Caramel, coffee, and a little of that vanilla are there as well. Finishes mildly bitter. Easy drinking and quite tasty. I just wish there was more body, but this is another quality output from Baird.

One of the many reasons I love Baird are the refrences to Cincinnati, Ohio. Amber/copper with a thick, full, tan head. Sweet malts, dough, fruits. A little bit thin, nice carbonation. Flavor is hoppier than expecting. Citrus and fruity hops. Biscuit malts, and a touch of sweetness. Finishes with a nice hoppy bite. I really enjoyed this brew, but I don’t believe this is an Oktoberfest. It’s just way too hoppy and not nearly enough malt. Still, i’d drink it again.
