Bottle that pours a hazy amber colour with golden highlights, and tiny particles in suspension looking like spices. The head is frothy-fizzy, very light beige with decent stay for the fizziness and some lacing spots left. Wild farm-like aromas with a caramel malt base, a touch of vinegar and medicinal notes. The taste shows a nice balance of the Brett wildness with all found in the nose, but all fitting together. A lightly drying finish, not too thick - so goes down well.

A hazed golden ipa with a thin lacing white head. In aroma, sweet fruity biscuit malt with grassy resinous hops, light mineral notes, light cereals, pleasant. In mouth, a nice biscuit malt with resinous floral hops, cereal, pleasant. Can at mondiale 2023.

Intenses aromes d’ananas avec légères notes de pin avec notes phénoliques rappelant le clou de girofle, un léger fumé et des notes d’alcool se rapprochant du fusel. De couleur jaune orangé et opaque, elle se couvre d’une mousse pas très dense qui se maintient quand même assez bien. Fruitée en entrée de bouche, elle présente des saveurs d’ananas bien senties avec un ensemble plutôt épicé avec des notes de poivre et une finale légèrement résineuse et grassy. Le corps est plus mince que la moyenne et la texture est légèrement aqueuse. Ne sachant pas ce que l’épeautre peut apporter comme saveurs, je ne me risque pas à affirmer que l’importance des phénols est un défaut dans ce style. Peut-être est-ce voulu? Olfactif : Acidité sauvage relevant de la levure. Notes fermières d’étable et de basse-cour avec de petits accents de pomme et une subtile touche tropicale. Visuel : Mousse de bonne épaisseur, pétillante mais assez persistante. Liquide doré, partiellement voilé avec quantité de fines bulles. Gustatif : Domination des levures sauvages en bouche avec accents citronnés, de subtiles notes de pin en finale et un très lointain fond d’agrumes. Dommage, le potentiel gustatif complexe des houblons s’efface complètement au profit de l’intensité des levures sauvages. Et c’est sans parler des éléments typiques des Blanches Belges qui sont également complètement submergés. Dommage, ça aurait pu être une bière très complexe.
